Food Network Cookware? Hit or Miss?

Food Network Cookware from Kohls

So what do you ya'll think about Food Network getting into the cookware business? Will it be a Hit or will it be a huge Miss? I'm hoping that they make some things that are decent quality and functional (here's hoping AB is behind the R&D for this stuff).

Vietnamese pâté recipe anyone?

As an avid lover of the banh mi, I crave them constantly, however, we don't have any within walking distance of my workplace so I wanted to make a simple banh mi pate for lunches, so my question is does anyone know how to make the Vietnamese pate? I've searched far and wide for a recipe and I can't find a straight answer!

well after reading pollan's omnivore's dilemma I would say that statistically speaking the people that are regularly consuming these types of foods are of a lower SES. Therefore, I believe that it is the responsibility of a higher power to at least put up some regulations because these people are eating this stuff as a regular meal replacement because they can't afford healthier foods that contain the same # of calories needed to survive. It sounds a lot like exploitation to me.

Eating Bugs: Hard to Argue With?

I think its a really interesting topic. I wonder if there's an article on a "serious eat's asia" somewhere that's saying the same thing about McDonald's food. I remember when I was traveling through Thailand there were plenty of carts rolling around with deep fried (in peanut oil i think) crickets, scorpions, all kinds of bugs. To be honest when they're fried they taste like oily doritos. I think the biggest thing is what Chefhorn said, people can't get past eating the entirety of an animal. The same goes for beef, pork, chicken, etc. A prime example is the great distaste for offal. Unless you grew up eating it, chances are you aren't going to like it simply because you know what and where it comes from. The majority of the time your gonna get a lobster tail but no head, same goes for shrimp, most people don't even get them with the shell on these days.

I think it's pretty irresponsible for the people in exec positions to allow such burgers on a fast food chain's menu. I mean it's no secret that a nice sloppy burger at a sit down restaurant will run you 1000 calories (give or take) but to promote such a clearly unhealthy burger to a fast food chain is bordering manslaughter in my books. If people can sue McD's for making them fat, then people should be all over Carl's Jr.'s. The way I see it, the customer is still the one in charge of what they eat and their own health, however, it's not to say that the accountability of the exec's at fast food chains should be diminished because of that. There needs to be a middle ground reached before the game gets too lop-sided; fast food is going to get out of hand or people are going to wise up and cities will have to put a moratorium on the construction of new "restaurants" serving fast food like they have in some areas.

Can't-miss restaurants in D.C.?

I second Rosa Mexicana, some real classy Mexican food there. I think Jaleo is getting a bit too overrated, the service is getting worse as the hype increases. If your willing to get out to Rockville, Joe's Noodle House is probably the best Chinese/Taiwanese food this side of the Pacific. If your down with the Jose Andres I would suggest his other restaurant down the street from Jaleo, the name escapes me (Oyamel i believe), a little pricey but the ceviche was very good last time I was there and they have some nice authentic chocolate mole's and other non-taco-quesadilla-burrito fare.

What's your favorite way to use Thanksgiving leftovers?

I like to take the leftover stuffing, turkey, green bean casserole, etc. and mincing it up and mixing it with the leftover mashed potatoes and forming thick pancakes and pan frying them then smothering them in gravy.... mmmm.... tasty!

Shrimp Veins

Yup, its the digestive tract. Not like its going to kill you or anything, I mean you are eating the shrimp so in essence your eating what it was eating. I've seen a few farm raised shrimp being sold as being purged, meaning the farmer starved them for lets say a day or so before killing them so that the tract is empty and there is no need to take it out.

How do you grill when you don't have a grill?

Add my "NO" to the George Foreman grill. It's okay for some hotdogs, but definitely no good for steaks. I don't even want to tell you about the grey, steamed NY sirloin that was ruined by the GF grill...it's just too painful.

Anywho, my experiences with the indoor, stove top, grill pans, like you see used on the FN, produce copious amounts of smoke. Good grill marks, good color and flavor, but lots of smoke. The advice above to finish cooking in the oven is smart, but handling a hot grill pan doesn't sound like fun. So if you have a poor vent/hood, I would skip it and go to the park with a little Smokey Joe or mini-Weber.

How do you grill when you don't have a grill?

I'll use my George Foreman for fajita chicken, but that's basically it. I wouldn't put red meat on it, definitely not hot enough and you miss that smoky flavor and charring! I'm in a similar situation, and have been grilled food-free so far this summer :( except for occasional visits to the parents'. Maybe I'll have to invest in one of those grill pans, except I have a stupid electric stove, will it work okay?

love love the Delonghi indoor healthy grill... I bought the one with the glass cover though, to retain moisture (avoid the smoke alarm) and cook faster. I did a lot of research first... glad i bought it. Paid $79 Amazon or Macys.

how much food channel (hours) do you watch per week?

I enjoy Food Network! I AM SO GLAD THAT THEY FINALLY PUT AFRICAN AMERICANS ON THERE TO SHARE SOME RECIPES THAT I CAN RELATE TO. I am not interested in panini or vinaigrette....give me soul food & my family is happy!! I am glad that they are more diverse now & I will watch them even more now, since I will be getting recipes that my whole family are used to & will be able to enjoy! THANX FOOD NETWORK...KEEP UP THE GOOD WORK!!
Also, dont be so hard on Rachel Ray....she is not a chef & it just shows how food network is not so fast to judge others, they accepted her & the audience saw themselves in her & that is how she has became so famous. She IS goofy, but that just reminds me that she is human! KEEP UP THE GOOD WORK RACHEL!! JUST (PLEASE) get rid of the goofy laugh....she laughs at LEAST 4 times a show & it is beginning to DRIVE US CRAZY!! lol

Who's your most/least favorite food personality on Food Channel?

Wow.....the animosity towards Sandra Lee in some of the comments is quite interesting. I’ve worked with and have hired professional chefs over the years and the short cuts they use in their cooking isn’t much different from Sandra Lee’s. She’s just honest about it. I know of one 5-star restaurant that opens a can of Campbell’s tomato soup, adds some garnish, gives it a fancy name and charges a ridiculous price. Anyone who utilizes a can of San Marino for a tomato dish cannot possibly sit in judgement of others.

I’ve tried some of the recipes of the highly rated “chefs” mentioned here and found them to be quite disappointing. The end result is what it’s all about....not how much one slaved in the kitchen.

Sandra Lee makes cooking fun....especially for those just starting out. And nowadays, with so many young folks working many hours in serious careers, I’m sure it’s nice to have a quick, fun recipe when one finally gets home at 7:00 pm and the kids are famished. I can’t wait to try some of her recipes with my grandson when he gets old enough.

I liked Alton Brown better before he went gimmicky and goofy.

sorry but if people want it let them have it! Personally I stay away from fast food, and even when SO and I were struggling financially, there were cheaper and better options available, including ramen noodles. Yes there is still personal responsibility, although the unethical lawyers of the world shudder at the thought.
