Soup Dumplings (Xiao Long Bao)

Pig's feet gelatine is a better jelly to use. It is firmer and easier to work with during wrapping. Make the jelly by boiling pig's feet in water, shaoxing wine, ginger and scallion. Traditionally crabmeat instead of shrimp is used in Xiao Long Bao. A little bit of oil or lard can be added to the wrapper to create that slightly translucent effect on the dumpling skin.
