I beg to differ - this seasoning is fabulous. We used 2 Tbsp per 1lb of ground beef. Thanks Andrea - been looking for a good mix for quite a while.

One thing not addressed in the reviews: how many of the "wings" were actually wings, how many were drumettes (sp?). For me, a wing's gotta be a wing, and anyone who serves all wings gets extra points. The public has a right to know!

I cook the leek in a little butter until it's wilted first then add the potatoes and water. We eat a LOT of this, freezes very well.

Online: Ruhlman, Serious Eats, Allrecipes.
Books: I am a devoted user of Elizabeth David's French Provincial Cookbooks and the Be-ro baking books!
I am also enjoying cooking items on Youtube, there are a number of home cooks on there who show things that TV shows often assume "everyone knows" e.g. what does a "simmer" look like, how small is small for "diced small" . I've been cooking a long time and am still learning from these.

Snapshots from the UK: Cadbury Creme Egg Twisted

I used to work at Cadbury's in the UK. Making the eggs was a delicate operation and many would fail quality inspection. One of the reasons iirc that these were not manufactured year round. The discards would be recycled - chocolate and fondant mixed and used as filling for "Border Creme" eggs - same chocolate shell as standard, foil wrapping was a variety of (faux) tartan designs. Most excellent, better than the original IMO. I haven't seen these around for a while and my contacts in the UK can't seem to find them.

Red or white wine in bolognese?

When I make Bolognese or even a regular pasta sauce, I first add wine (typically red, but I'm not anal), evaporate it almost completely, add milk or cream and cook that off almost fully as well. The mix of the two adds an amazing richness and mouthfeel to the sauce.

Red or white wine in bolognese?

I grew up with red in bolagnese-type sauces, and I've tried both, thinking the white would be an abomination. But it's not. It adds a brightness that you just don't get from the red, like adding lemon juice to a piece of cooked meat at the end.

I use mid-quality Chianti, because I just think it reduces better than white wines. And I add chicken livers. The real key to this meat sauce is to reduce it -- then reduce it some more.

I agree with the distate left in my mouth over the anti-chain bashing. You probably know where to get the best wings in your town (I know I do!) But what about those people who don't have a "wing place" in town? For some people its fas food or nothing. And I don't have the money to waste on the worst chicken wings. I appreciate when Serious Eats does stories like this because it saves me time, money, and a lot of frustration.

So thank you for your stomach's time, Erin! I will agree with the decision to put KFC out there as the best all around fast-food wing place. They do the best they can as a chain :)

I applaud your attempt at rating the fast food chain wings. Very interesting article.
I've still never been to popeyes - mainly because the only one I know is across the street from Nathans in Coney Island.. and you know where my allegiance lies...

Aww, no love for Atomic Wings? BW3's? Both fast food joints geared towards wings only. I think there are a few stores for these chains in the city

I disagree with @Machine. This was a worthwhile post because it addressed what sometimes may be the only wing options in certain markets. For people who travel for business, there are many places where chain restaurants are pretty much the only option for people other than locals "in the know". The local giveaway weekly in fact does its annual food awards on this basis, e.g. "favorite pizza - chain", "favorite pizza - non-chain" and so on.

I would love to see follow up posts with the same comparison involving more upscale chain wing options, e.g. Buffalo Wild Wings, WingZone, Buffalo Wings & Rings and so on, as well as posts with the same comparison of local establishments in a number of markets. As a former Buffalonian married to a man whose favorite food in the world is wings, I volunteer to take a group around in my local area to do the testing!

Snapshots from the UK: Cadbury Creme Egg Twisted

Creme Eggs are such an icon to me as someone who lives in the UK. I prefered the Cadbury Dairy Milk with Creme Egg bars a few years ago though to the Twisted things.

@Knowledge Bomb - I think they sell them all year round.

i made that soup for thanksgiving. it was a bit hit! roasting the veggies is key. great way to ramp up the flavor, and actually easier than doing them on the stovetop.

I live in London and you dont have to wait till Easter for Creme Eggs! I think they're available all year round now, and if not will certainly be in the shops on Boxing Day when they generally start stocking the Easter range! I do love creme eggs - haven't had one for a few years but am now craving one! or a twisted bar!

My manager at work was planning to make a pimped up version last year (from pimpmysnack) but felt that death by creme egg filling was a bit of a sad way to go!

I don't like how they now have Creme Eggs in the US for every holiday. I saw "Egg Xmas Ornaments" yesterday. I've also seen them for Halloween. I liked that they were only available part of the year before.

Not to say that it stops me from eating them or would stop me from eating this bar...

The high creme to chocolate ratio in the original is what makes it so great! I'm one of those people that will lick the creme out and then throw away the chocolate, if I can get away with it.
