Just try potatoes Dauphinoise out of the old Joy of Cooking made with Beaufort. Heaven. Boil the sliced potatoes in milk initially and then bake with the beaufort.

Let's be clear about originals. No knead has been around for a while. The King Arthur Flour Anniversary Cookbook that was publishing in 1990 and republished at THE ORIGNAL KING ARTHUR FLOUR COOKBOOK has an "Easy No-Knead Whole Wheat Bread" recipe on p. 506. That was 16 years before Mark Bittman "announced it to the world."
