love this! i love making my own infused simple syrups, infused liquors and have dabbled in DIY bitters—all of which are pretty simple. I draw the line when I have to buy special ingredients from multiple sources, especially when I know I can just go to the store and buy an excellent version of it.
you can make it with the hachiya you may just want to adjust the amount of simple syrup since it will be sweeter.

I think that sounds fantastic! And yes, i think it would leave a stronger tart cherry flavor, so if you have the time, I would go for it. However, for something quicker and quite delicious, the muddled cherries work great.
You don't actually need water because the strawberries release all the liquid that you need.
