Recipe Testing

If you mean for free...Cooks Illustrated has a list of cooksillustrated.com subscribers who have signed up to test their recipes when they request it.
It is however very infrequently that I get asked and I do not know if they have enough/too many/or need more testers.

I sooo missed TJ's from when I lived in NJ. Had to load up the car everytime I went back for a visit. Thankfully they finally opened one up in Richmond. Made me a happy woman.

Christmas Fish to serve a crowd

O Please, therealchiffonade, the recipe for Yin/Yang Shrimp! I too do a seafood Christmas Eve, and it has morphed over the years to lobster, shrimp, scallops and then a meat for those who do not eat seafood. I have been looking for a really good but easy shrimp dish that those who do not eat the lobster will still feel is 'special' but I need it to be perhaps baked..as in pre-prepped and ready to go in the oven...no last-minute standing at the stove top if I can help it...steaming all those lobsters is all the last-minute stove-hanging I want to do.

Meat Lite: Stuffed Savoy Cabbage

These sound delicious; how did you know that I was just getting ready to search for a recipe for stuffed cabbage rolls? My Polish mother-in-law used to make delicious ones, she called tham 'galumke'...they seemed very delicate given the ingredients, and the tomato sauce was as memorable as the filling...it kind of had a sweet/sour quality to it that I am stumped as to how to achieve. Your addition of brown sugar solves half of the equation...a little vinegar?
Thanks for the recipe...now I'm inspired.

Cook the Book: 'Sweety Pies'

Fried Apricot Pie at Pat's Barbeque in Fort Worth. Back when I was in high school a certain group of us from the nearby neighborhood used to hang out there after school and on weekends. Barbecue bologna sandwiches and fried pies were our staples along with the fountain-made cokes and 7-Up's to which you could get vanilla or cherry syrup added. But the apricot fried pie was the most delicious pie I have ever eaten...the crisp pie crust was tender and not greasy and was overloaded with pure mashed redolent apricots...that is all you could taste along with the subtle unctiousness of butter. I have never tasted a pie purer in flavor since.
