@ Daniel Zemans - Yep, been there a few times. It's pretty tasty, they use organic ingredients, and they have a good selection of beer. Nice atmosphere, too, kind of funky and rustic, totally different from the interstate off-ramp chain restaurants that Paducah is full of.
I prefer a nice thin crust myself, though...

Oh my lord Jesus this was delicious. I kept sneaking spoonfulls of the cream and milk as it was 'steeping' with the smoked haddock. I made some crusty wheat bread that baked while the diced vegetables were cooking and added some frozen baby peas when I poured the liquid in. I also held the cooked, flaked fish out until the very, very end, until the potatoes were almost done, so it wouldn't overcook and get too chewy. Oh, and I used a few good-quality, unsmoked bacon rashers instead of pancetta since it was much too cold and snowy to walk the extra two miles to the fancy grocery!
HOWEVER - as delicious as this was - it was far, far too rich for a big bowl on a sunday night in front of the TV. I ate it all up anyway because I am terribly greedy (and I was almost sick!), but my husband couldn't finish his bowl. I would definitely make it again as written to serve in small portions as a first course for a special occasion, but when I make it again for Sunday supper, I will use either use just milk, or maybe three cups of milk and one cup of single cream (not double!!) and I would probably add another half-cup or so of the medium dice potatoes to bulk it out. And I might add a tablespoon of flour to the vegetables towards the end, a couple of minutes before the liquid goes back it, just to make a bit of a roux to make up for the body provided by the double cream.
