Simple: Regular Distribution is manufacturer (x% margin)->distributor (30% margin)->Retailer (30-40%Margin). Trader Joes has huge volumes so it goes like this Manufacturer (lower margin than usual)-> Trader Joes. They cut out 30-50% of the margin. Hopefully that helps understand why they contract manufacture.

I was just there 3 weeks ago. FANTASTIC place. Great variety of bacon, sausages and steaks. A real find in an area that has little gourmet food offerings. But it isn't all gourmet focused. Oscars is what we used to have in this country before mass supermarkets and distribution. Small, family run butchers and purveyors that are consumed with quality. Compare that to mass market Stop & Shop, Tops or other meat departments....those places are scary! So, go to Warrensburg, NY, stop by and enjoy some of the best smoked products you will find North of NYC.
