IDEAS? quick, CHEAP, healthy item for a lunch potluck
You could make a couscous salad- 1.5 cups of couscous, cooked, add one can of chick peas, a handful of toasted nuts (I like almonds), a handful of raisins, a couple green onions chopped, some chopped cilantro and dress with lemon juice and olive oil and plenty of salt and pepper. Easy and if you don't have that stuff, make it with stuff you do have- cherry tomatoes, white beans, basil and toasted pine nuts.... Roasted red peppers, goat cheese, toasted walnuts, parsley... Your options are endless.

Meat Lite: Veggie-Chicken Koftas
I have made these twice since the recipe has been posted. Both times in the interest of saving money I de-boned the chicken myself (not my favorite task, that's for sure). My husband and I love these! We had them once with hummus and lentils and once in pita bread with tzatziki sauce. We've also taken the left overs and tossed them with greens in pasta in place of the usual sausage. Yum!
Any idea how they freeze?

I make this all the time! mmmm so delicious!
I double all spices, ginger and garlic. I also double the lentils and use chicken or veggie stock for the liquid. It makes a huge difference.
Oh, I prefer the garam masala to using the curry powder, I've tried it both ways.
