I made these and they are amazing. I might have used too many blueberries for mini muffins, so I had extra batter. Do not overfill the mini muffin tins because it just spills over into a mess. This recipe is really simple and you could make them in the morning. They are a 1-2 bite treat.

Spanish-Style Cod in Chorizo-Tomato Broth

I made this this past weekend. I found the spanish dry style chorizo next to the spanish cheeses in the deli section. Our fish guy takes the skin off the cod, and it still worked with this recipe. There was plenty of sauce left over, so I recommend serving with plain rice. This dish is very similar to the Portuguese Fisherman's Stew at Legal Seafoods, which is one of the best filling+value:healthy calories items on their menu.

I love SaraBeth's preserves. If you are visiting NYC, I recommend going on the Chelsea Market food tour, where you will taste a sample of these products! I was lucky enough to find the $12 bottles of preserves at TJMaxx Homegoods and I cleared the shelves of all the jars, which is a steal at $6.99.
