What brand of knives do you use?

I use a mixture of Henckels, wusthof and kyocera ceramics as of recently. If you want a different type of knife try ceramic and they even have a serrated knife now...

Marinating from a frozen state...does anybody do this?

Would the marinade get watered down when the meat eventually thaws? I'm sure it's not too terrible but maybe the flavor you're looking for will be less entense? Also depending on how frozen the meat was, I would think the marinade will not penetrate the meat until it's completely thawed out, which would extend the amount of time that you need to keep the meat marinated.

For a light meal instead of a side dish, I'd add very crisp crumbled streaky bacon, some shavings of cheddar, Tussers or Colchester cheese, and avocado. Cherry tomato wouldn't do any harm, either...

Interesting idea to grill the lettuce - doesn't it turn romaine more bitter than it is already? I do often stir-fry leftover salads - as long as they don't contain avocado - and mix them with rice or pasta (and cheese, when I feel like a bit of extravagance) for a make-shift lunch. Cooked lettuce is delicious, but expect a sizable reduction in quantity!
