Chocolate/Peppermint Bark for a Diabetic
I was planning to make peppermint bark this Christmas because the oven at my house isn't working (another topic unto itself) and to give it as gifts.
My dad's diabetic, and I know he'll eat the stuff regardless, so I'm trying to think of a way to lower the sugar content in the stuff without him really noticing. I know I don't actually add sugar to the recipe, but does anyone have any suggestions? Type of chocolate to use? Candy canes?

Missed the episode, but great write-up! I probably wouldn't have been able to make it through anyway. I bet Zimmern is hating on his producer for that episode.

@YvesPaul - You think so? I remember watching the Ethiopia episode, and Zimmern didn't particularly like the food but praised their generosity and hospitality.
