gastronomeg: Here in Baltimore, MD where I am, I get my miso ingredients from the Korean supermarket or a local Chinese grocery. Not sure about Columbus, but I'd think it would have at least one of these. I've also seen bonito and konbu at Whole Foods, not sure about miso though.

That kombu is the same brand I get, it's from Hokkaido supposedly the best place for kombu.
I believe you're using firm tofu though? We only use silken in soup, traditionally.
Have you ever added a few dried anchovies? They add to the richness of the umami in the dashi. Yum.

This just goes to show what I know about Japanese cuisine. I laughed myself nearly to tears while reading this post thinking it was some sort of tongue-in-cheek spoof... then I started reading the comments and they convinced me this is really how good miso shiru is made. Now I'm ashamed of myself. You gotta admit though that the post is very well written.

How long do bonito flakes last? I purchased some recently and was disappointed to discover that there was a "use by" date on them that had already passed (serves me right for not paying attention in the store).

I seem to be returning to vegetarianism, and lately I'm skipping the bonito. I can't decide if I miss it or not.
I grew up near where South River Miso is produced, so I'm biased - but it's good stuff!

Thank you! My daughter is an anime/Japan-ophile, and wants to make miso shiru at home. I've pulled together everything but the bonito flakes, willl follow your lead when we're ready to cook.

great post! puts my clutzy miso soup making efforts to shame, that's for sure...what with my instant dashi and random tub of miso that I can't really read. then you had to go and mention mackerel as an addition, and boom! instant hunger.

south river miso is so delicious! it's so easy to make miso soup. if you use the powdered mixes, you're missing out on the health benefits AND TASTE!

Regarding Columbus-Whole Foods usually has a lot of this stuff, I know they opened a store a year or so ago off of 161 near the Worthington/Dublin area (next to a bath and body works and Filene's basement.) I know they have miso over in the tofu/vegetarian meat substitute refrigerator section. I'm pretty sure that there is actually an Asian market across the street...I seem to remember them converting an old Damon's or pizza hut building.
There is also a Japanese market I've been to a few times
