Dinner Tonight: Chipped Beef Gravy

This is still a popular breakfast or dinner treat for our family. In fact, I think we'll have it for breakfast tomorrow. We've always called it chipped beef gravy. My mother and grandmother both used to make this for us over the years, and I have carried on the tradition. We eat it over buttered toast or biscuits along with boiled eggs. We often will cut up the eggs so that it's basically the love child of Eggs Goldenrod (better known in my area as Creamed Eggs). It might be considered "peasant" food, but it's a great, quick meal that's filling and comforting.

There's a local, family-owned restaurant called Mrs. Rowe's Restaurant and Bakery that makes the best chipped beef gravy I've ever had in any restaurant. Mrs. Rowe's is a treat anytime though. If you're ever passing through Staunton, VA on I-81 it's definitely worth stopping!
