I hate to sound like the local/sustainable agri- police but... uh... watermelon in February? Hey, if importing bland, out-of-season fruit from half a world away is a turn on to you, go for it. Maybe a little basil, peach sorbet for dessert?

i wouldn't salt the water before poaching. you'll be reducing it a lot after and you never want to salt before doing that. could end up a very saline reduction. just sayin'.
