Tried it with fresca over the weekend and did not like it at all. But I did not add fresh lime juice and I think that would have made a big difference. Trader Joe's makes a good grapefruit Italian soda - might be good in this recipe.

Both the review and recipe instructions reference rosemary, but the ingredients call for thyme. Am I missing something here??

When I lived in Guadalajara, this was very common, and my drink of choice =). Although often made with Jarritos, it was also often made with Squirt. It is definitely something that I have since made many times at home.

This drink is one of my all-time favorites. It definitely needs a good, natural grapefruit soda -- Fresca, as much as I like it, won't do (esp. artificially sweetened as we get it here in America). Ting works great if you have any trouble finding Jarritos.

As for the tequila, I'll disagree a bit with Paul here. For drinks like a Margarita, 100% agave is a must. For this one, seeing as how you're mixing with a very sweet soft drink, I don't think it's necessarily required. A good quality "mixto" like El Jimador (made by Herradura) works great and is in fact the way Palomas are usually made in Mexico. If you want to use a 100% agave don't let me stop you, but honestly this ain't the place for anything remotely expensive.

Finally, as Anita over at Married...with Dinner notes, a nice big dash or two of Fee Bros. Grapefruit Bitters really brightens it up. I also like to add the salt at the very end, sprinkling it over the ice at the top of the finished drink.

Wow! Still licking my fingers after cooking this great recipe!

A couple comments: I substituted the rosemary for fresh thyme... not exactly a radical move, but for anyone wanting to make this, it's a worthy substitution if you have on but not the other. Also, I used plain old 12" foil and had no problem - just make sure you seal it well!

Also, the 7-minute cooking time was dead on. It didn't overcook nor did I have to throw it back on the skillet for a second or two more.

Sad to say but a lot of those reasons that shopping in Italy is so great (helpful vendors who give unsolicited advice) would be taken offensively by American shoppers. I did my time in Italy and loved and experienced everything stated above but when I got back to the US I realized that the way people grocery shop is usually so hurried it's hard to appreciate all of that.

The unfortunate truth, of course, is that you can't get this in the U.S. Not only do real butchers barely exist anymore, none of us have the actual time to go shopping every day for dinner! I know that working from 8 until 7 isn't conducive to putting the time needed into a good meal.

It would take a complete cultural change in the U.S. to achieve this. How sad... makes me want to move to Rome!

I think i would be much too big a coward to shop in Italy, and would therefore miss out on all the good stuff. Having to fight for your turn in "line", only to then have all the Italian nanas behind you (who have been cooking EVERYTHING from scratch their entire lives) snickering as the vendor reveals just what a food dunce you really are (like the all-knowing butcher above revealing all that you do NOT know), while you struggle to communicate in a foreign language! Sure i would learn a lot. Sure i would eat wonderfully. But i'm not sure i would make it through this obstacle course....
