Harry Potter and the Legend of the ICE Cooking Class

I came across this recipe on tastespotting a while ago. I haven't made it, but it looks like it would make a better (or at least more authentic looking) butterbeer!

So, so good. I grew up near Solvang and it was always a treat to go have aebelskivers. I love making a cinnamon bun version, very sweet, but so delicious!

doesn't really matter how it's made, I just like to add sweet tea vodka... my new favorite drink this summer!

help: great eats near pismo beach ?

Aww, Pismo Beach :). My mom grew up there and my grandfather still lives in Shell Beach. All of the suggestions so far are great, and I would put in another vote for F. McLintocks. It is a reliably great steak house.

Congrats on the graduation!

Snapshots from the UK: Walkers' Crazy-Flavored Crisps Competition

@ mayabaxter- I have!! When my roomie and I went to thailand we had a "chip challenge" where we held taste tests of all the flavors we could find. Nori seaweed was one, and neither of us liked it at all. We also tried Double Cheese Pork Burger, Extra BarBeQue, Spicy Seafood, Hot Chilli Squid and a few others I can't remember. The hot chilli squid was my favorite, and the real double cheese pork burger they serve at McDonald's in Thailand was awesome.

Dinner Tonight: Panuchos Yucatecos con Chorizo

I was in Merida in December and took a class with Chef David Sterling (Los Dos Cooking School) that I would highly recommend. One of the dishes we made was panuchos. If you want to take it to the next level make homemade black bean refritos and strain them until they are very smooth and thin before filling the tortillas (and of course making your own tortillas helps too).

Eat For Eight Bucks: Paprika-Braised Chicken with Chickpea Puree and Crispy Shallots

Just made this for my roommate and I. I made it a little bigger with 6 pieces of chicken, about 1.5 times the broth and double the veggies (we're big on having leftovers for lunch) and threw in a red bell pepper that was about to die in my fridge. It was delicious and my work-lunch buddies were extremely jealous of the leftovers :) I can't wait for the next installment!!

Food Theft

I remember being about 7 years old and being a girl scout with my mom as the troop leader. She had all the cookies that people had ordered sent to our house so she could give them to the girls to deliver to the people who had already paid for them. I clearly didn't understand that those cookies were already bought and paid for. I snuck (stole??) a few boxes, ate all the cookies, and hid the evidence in my laundry basket (I was a smooth criminal). Needless to say I was caught, and I hardly remember ever being in more trouble.

Cook the Book: 'The Modern Baker'

My most recent big disaster was just this past week when I tried to make a banana cream pie (which I have successfully done many times before). I had to try twice before I had a crust that I could actually roll out, the first one I was too careful not too add too much water and over-work it, and so on the second try I over compensated and it turned out super tough. Then the first batch of custard never set up. At least my roommate enjoyed the "banana pie soup" I gave her for breakfast, and it only took 24 hours to get a semi-edible finished product.

Apparently, the course designers base their work on the movies & merchandising: Anyone who's read the books would NOT eat anything Hagrid cooked/baked. LOL

BTW, my kids are not culinary wunderkind, but they have made stew and scones, et c for themselves (with knife work & stove/oven carefully supervised) since they were in single digits. My younger boy (12 yrs old) is a fussy eater & cooks for himself when he doesn't like what the rest of the family is served. (He has to pony up for his groceries & parents have veto power over menu selection.) Saves a lot of tension at the table.

Oh Grace so jealous right now! But I have to say I am a little disappointed with the low level of Harry Potter knowledge by the kids in the classroom. That's a downright shame.

I thihk this class looks absolutely fabulous...I come from a foodie city too, and we don't have classes like this for our kids. I know my 12-yo would have loved making butter beer, and food for Snape...good job Chef....

This sounds like SO MUCH FUN. What a cool way to spend a Saturday. I am a Harry Potter fanatic and am definitely in need of a cooking lesson or two. What a great class to bring in a younger crowd. The food looks pretty tasty, too!

Gadgets: The Aebelskiver Pan

I got my aebleskiver pan for ten bux in an after-Christmas sale at Rite Aid a few years ago.

I don't bother with fillings. I just cook cornbread batter and serve with butter and syrup. Sybaritic!

I'm most comfortable with something about as thick as a quick-bread batter.

We are very excited about our 9-hole cast iron pan! We are curently putting the finishing touches on it with a local foundry here In Minneapolis. We're hoping Mr. Aebleskiver will have them available on his site too!
So glad to see so many families still enjoying aebleskiver!

Glad I could help, Indecisive Eater!

Meem, there's a recipe linked in the article above, to the right. There's a batter recipe, which is certainly worth trying, though when I'm lazy, Bisquick works well too. (It may not be from scratch, but you could never tell, and it's a whole lot cheaper than the Williams Sonoma mix!)

Gadgets: The Aebelskiver Pan

I got mine from Amazon for very little money and it's cast iron. The pans from TV are flimsy. The pan usually comes with a small cookbook.

The pancake puffs are delicious and about as much fun as they say. I stuffed a couple with Nutella and thought my friends were going to carry me around on their shoulders.

Welcome and thank you for this article! I've been wanting a takoyaki maker so sometime now, but could not justify it's single usage to my husband. This offered me a cheaper option and shows many sound uses for it! And he's now excited about it!! I order one from Amazon and cannot wait till it arrives.

My Grandfather was Danish - and I remember many many summer mornings sitting across the breakfast table from him trying to see who could eat more! My poor Grandmother would be making Aebelskiver for hours!

When my girls were little these were their favorite breakfast treat - always, like at Grandmother's, with bowls of powdered sugar, and wonderful homemade jams and apple butter to scoop up in them.

My DH loves them - I don't make them too often - but they are always a warm and wonderful reminder of my childhood. Thank you for the memories. I shall have to try some savory ones one of these days. Grandmother and Grandfather will roll in their graves - but perhaps she'd have loved them.

Dinner Tonight: Panuchos Yucatecos con Chorizo

I love that more articles are being written on Yucatecán cuisine. It is an underrated style that features a blend of Mayan, Spanish and Caribbean, particulary Cuban flavors. Mérida is the food center of Yucatán and the cooks here use either Cochinita Pibil or Pollo Pibil for their Panuchos, although most braised, flavorful third category cut meats with will suffice.

For this recipe, I suggest a few changes:

The Beans: They must be black beans! Patricia Quintana has a great recipe for Yucatecán-Style Sieved Black Beans flavored with white onion, habanero and fresh epazote. Epazote is a great herb that rids the beans of their gaseousness and provides excellent flavor - It should always be used fresh and can be found in big city farmer's markets.

The Tortillas: Probably the most noticable flavor difference that will elevate Panuchos to new heights will be had if you use masa, or fresh corn dough (sold in latin markets, and some popular supermarkets as "Masa Harina"). Patricia Quintana also has a great recipe for corn tortillas. Please avoid the store bought corn tortillas - they taste nothing like the real thing.

The Pickled Red Onions: A few tablespoons of light brown sugar and a few allspice berries will add great flavor. Toast these along with the cumin seeds and make sure the oregano you use is Mexican oregano. There is no need to grind these spices. Simply bring everything except the onions to a boil then pour over the onions and let cool to room temperature before eating. They will keep for at least 2 months.

The Fat: Use pork lard instead of oil to fry the Panuchos - you won't regret it!

I like virtually all fruit, so I can't pick.

But my favorite fruit-related thing is the signs in the grocery store this time of year advertising "Personal-sized watermelons." I always have to wonder . . . You hear those stories.
