San Diego tots meetup
As per conversation in Erin's inside view of R-Gang, we're going to have a tot meetup. October 23rd, next Tuesday, lets say 7pm? Maybe some of you will get there earlier, but I can't!

Oooh I LOVE cooking with harissa. I marinate chicken in a mixture of the harissa, olive oil, lemon juice, garlic slices and onion (and lots of black pepper). Then I grill it. SO delicious.

Question - how do I keep asparagus from getting overcooked in a quiche?
Am I the only Jewish person who finds the stringency of passover rules entirely silly? Like... I can get on board with not eating leavened bread. Fine. Even pasta. But rice? It just doesn't make sense to me in terms of the holiday's historical basis.
Serious question - what do I have to wear when I go there? Erin I'm so afraid of looking like a dumbass cuz I live 3 miles from there and I needs to go. So please tell me.

My WNL burger was good, but it definitely was packed super tightly and just... wasn't great.
So why does WNL make a burger that's basically meatloaf?

Ok, so that makes sense. Are there any ice cream machines that reduce the container temperature slowly while churning? I'd think that would be the ultimate way to make creamy ice cream, as you're forming small ice particles and continually distributing them through the mix. Our 70s il gelataio (which is my favorite appliance name ever) only does one temp, but I bet we could rig it up to a PID to make it variable... franken ice cream maker :)
This might be a stupid question, but I never chill ice cream before churning and I'm wondering if it will turn out creamier if I do. Is this because it reduces formation of ice crystals? What's going on with the pre-churn chill?

While looking at Erin's behind-the-scenes look at how the tots are made at San Diego's R-Gang, I found myself wishing there was some kind of city-specific meetup through serious eats. Nothing formal, maybe just a click through to post to people from your city about trying a new place, food-specific events, etc. We're all foodies, and foodies love eating and talking and talking about eating, so I figure we should do that together.

I was quite let down by my burger when I visited Burger Bar. It was practically tasteless. And for the 21 bucks I plopped down for it, it just left me wanting quite a bit.
