@Bill Woods, it's just the greens. I think two bunches could be enough depending how big the bunches are. I'd buy more just in case. You can use the whites in stir fry or something! They are usually more oniony than the greens.
Extra-Flaky Scallion Pancakes
I've been making scallion pancakes for years. My problem with the oil step is that it leaks out when I roll it out from the jelly roll to pancake. One of my mom's Taiwanese recipes says to mix some flour + oil + salt together into a paste and then spread that in each pancakes. I found it to be a lot cleaner. I notice this recipe has you add the salt at the end. I prefer my pancakes salty enough so I don't need any soy sauce (maybe this is the Taiwanese style?) and that's why I include it in the paste.
