cheesemaking resources?

I recently purchased "Home Cheese Making" by Ricki Carroll, and it seems to be a pretty good basic how-to book for cheese making. Something worth checking out at your local book store anyway.

I've recently started the at-home cheese-making madness as well. If you have ricotta down, probably the next logical step is mozzarella. A mozzarella kit (or the individual kit ingredients) can be purchased at http://www.austinhomebrew.com/ and there's a video for mozz making on their site as well. Best of luck to you!!

Bacon is fantastic. A very small amount can be added to any number of dishes and has a big flavor impact. It adds flavor to greens, seafood, even dessert ... and I hear it's good with breakfast too. It's fairly easy to cure at home, and it freezes very well. There's very little not to love, actually.

Her onion soup - she makes the wonderful beef broth from scratch, starting with the roasted bones. Martha was the first one who showed me you needed to roast the bones first for a nice rich beef stock.
