Just this weekend I made Deborah Madison's Really Good Mushroom soup, which turned out to be even better than "Really Good". It's my new favorite soup, and it is so rich and hearty that it is definitely a main dish.

Spinach sauteed in olive oil with a little garlic and then a little tomato thrown in at the last minute. Thin skinned steamed vegetable dumplings, pasta tossed with grilled vegetables, and of course, just about any potato and cheese dish.
I bake a lot. I like trying new cookie recipes, and finding interesting things to do with cupcakes. Lately I've been trying to improve my pastry skills.
I love manchego cheese with granny smith apples...camembert with carmelized onions...tomatoes with really sharp or smoky cheddar...gouda and fresh mozzarella all on their own..brie and just about any fruit. I'm a big fan of cheese!
If I had a garden, I would definitely want to grow corn and heirloom tomatoes and cucumbers. And herbs, of course. Maybe my own lettuces, and perhaps peas. Oh, and carrots and zucchini. I need a bigger yard!

Definitely want to try tofu but I have eaten veggie burgers and also alot of pasta...this would help me to continue being a vegetarian which I started after Thanksgiving!!! ;-) Love ANIMALS!!!!
Favorite and simplest veggie main dish is baked tofu, usually with Honey-Mustard sauce or BBQ Sauce.
smoked tofu stirfry or a masaman curry - there are so many good thing: it varies by the season!
butternut squash ravioli with bleu cheese and parmesan in a light butter sauce. so decadent it's like dessert!
Any vietnamese dish doesn't require meat for me.. so fresh and flavorful.
