I think I must have ordered wrong every time I've been to In N Out. I've only ordred on the menu and thought that there was, like, way more other stuff in the burger than meat - I couldn't really taste any beef. This four patty thing might be just the trick.

I take care of the pungent onion flavor by placing thinly sliced onion on the just-flipped burger, then placing the cheese on top to melt. By the time the meat is done, the onion has softened and mellowed.

actually, hold the ketchup too ... too darn weird tasting for me, i have never been a fan of the stuff

my perfect burger is a chicken burger with lettuce, avocado, tomato, olive tapenade, and spicy stoneground mustard

or a bison burger with mustard, pickles, and lettuce

or a salmon burger with spicy mayo-free coleslaw and apricot jam .. mmmm

@chascates, don't you find the flavor of raw jalapenos takes over the burger? I really wish Five Guys would use the pickled ones, every time I've tried their (fresh) jalapenos, it just ends up making the predominant flavor 'burn.'

I like my chopped red onions & fresh, non-pickled jalapeno slices on top of melting cheese. They're less likely to fall out of the burger that way. Any bacon should be at the very top. I like mayo on the top, especially with bacon, and spicy mustard on the bottom. Both buns griddled or toasted. And a little less than a 1/4 teaspoon of anchovy paste in the burger patty really makes a difference.

Thanks to AHT I now put my mayo on the bottom bun. My order:

top bun
lettuce (optional)
tomato (optional)
cheese
patty
mayo
bottom bun

If no lettuce and tomato, I like pickles above the cheese.

@The Costuminatrix: Thanks for the info! I'm glad to hear a report from an AHT member. :) I don't like beer so I probably wouldn't go to this if I could, but the burger options sound interesting.

Burgers & Brew This Saturday in Middleton, Wisconsin

I was at Burgers & Brew last year. It's a great idea and it is fun! I was given free tickets from friends or I probably would not have gone....for Wisconsin, it's kind of pricey for my budget.

I felt that the veggie red-rice burger was way too dense and flavorless, and smothered in too much mayonnaisey sauce; the Lombardino quail egg burger (which they are reprising this year) was beautifully presented but just all right tastewise (mine was too overcooked overall for my liking), but I loved the Bluephie's burger with pickled vegetables. It was just the right blend of sweet and spicy. And it was sorta fun to walk around and try to pair up your burger with different kinds of local beers. The Sprecher sodas were pretty tasty too.

I'll be interested to hear the reports from this year's event.

Always nice to see a Midwestern mention (that isn't one of the bigger cities) here on AHT.
