Sounds scrumptious! We do not consume ANY commercially processed flours however, so I will have to do a few trials of my own to lighten it up (density - not color, my family is used to whole wheat). Hmmm... your oat/wheat ratio with gluten flour and a couple vitamin C tabs tossed into the mix maybe At any rate, DEFINITELY going to try this! :)
Used to keep a culture of it all the time, many years ago. Always had one gallon jug atop the fridge with the "mushroom" growing up in it and another in the fridge. It's many healthful benefits can be had by downing (or sipping if you like the taste) just a few ounces each day... say, two to four. I have never had commercially processed kombucha tea. I have no idea what's been done to that in the "processing", so can;t really vouch for its otherwise wonderful qualities (when made fresh).
