Brooklyn Black Chocolate Stout
Belcourt: A Hamburger for the Locavore and the Purist
I second Adam's comment - that's about as "not too finely ground" as it can be without it being the original slab of meat.

'Top Chef' Season 5, Episode 6: It's a Wonderful Kitchen
That was an awful episode last night. Uninspired dishes, the holiday theme being forced down our throat (was it just me or did some of the cheftestants wince at the theme considering it was mid-summer during the competition), and, to top it all off, nothing happened to move the competition forward. The worst hour (okay, one hour and fifteen minutes) of Top Chef I've ever watched.

Bacon and chocolate is an awesome combo.
City Bakery Turns Boozier Friday
The beer geek in me obligates me to list out all the taps in this photo (left to right):High & Mighty High & Mighty Stout, Kelso St. Gowanus Belgian Golden Ale, Sly Fox Phoenix Pale Ale, Kelso Pilsner.
I've never had the St. Gowanus so a trip to City Bakery (for beer!) might be in order.
'Top Chef' Season 5, Episode 4: Accents Are Good for TV
Regarding the Quickfire challenge - there had already been an amuse-bouche challenge to start season three where Tom pretty much hammered any chef for not getting the concept of single-bite hors d'oeuvre. I'm a little annoyed that Rocco wasn't as fastidious in his criticism of some of the cheftestants that clearly made something closer to an appetizer.
My prediction that Ariane is this season's Lisa (TC4) in terms of her ability to survive and thrive is looking good. Though I'll agree with ArchieLeach in that Jamie is starting to have the same body language problems that Lisa displayed.
Why is Rocco "famous again?" Did you not see his wonderful "What's Your Med Style" ad campaign for Bertolli?
Ridiculous Food Predictions for 2009

'Top Chef' Season 5, Episode 3: Food Fighters
@bessfour You didn't miss anything. There was no winning cheftestant/dish last night. They got to watch the Foo Fighters perform so everyone on Team Sexy Pants won.
Does anyone else find it funny how the show goes to great lengths to sell us on it being a Thanksgiving episode even though we know filming took place in the summer?
Roasted Delights, Chinese Barbecue At Its Best [Update: no longer open]
@Da_Vid The roast pig is a whole roasted pig where the skin crisps up really nice. Roast pork is a cut of pork that's been slathered in sauces and then roasted - the result is a red glazed piece of pork.

Alaina, you had a lot of fun with the section titles, didn't you?
Butterball had to be one of the most blatant uses of product placement without it being a part of the challenge's description.
My gut feeling is that Ariane will now run off a streak of "safe" challenge results and will make it to the latter half of the season. As far as this week's eliminated, I would have sent Daniel packing. He messed up potatoes! Richard's flaw was trying to be too high concept with the s'mores.

Mmmm, crispy pig's skin.
The bacon and egg fried rice looks really tasty.
Have a Chinatown Thanksgiving With a Turkey from Roasted Delights [Update: no longer open]
A few years ago, my parents, with no interest in cooking their own turkey, ordered one of these birds for our Thanksgiving dinner. That mystery gravy really is awesome. Don't get me wrong, I'm happy my brother makes the Alton-style brined turkey these days but the Chinese-style turkey fit in really well with the char siu and ribs that my parents preferred to make for Thanksgiving.
Paula Deen Is Trying to Kill Us: The Thanksgiving Special
SE needs to do more "Paula Deen Is Trying to Kill Us" (henceforth known as PDITTKU) posts. I dare say that a weekly feature wouldn't be enough to cover the breadth of artery-clogging recipes in her repertoire.
Oil-less Turkey Fryer
So how exactly is this frying?
No thanks, I'll stick with the oven. Or, you know, a real fryer.
'Top Chef' Season 5, Episode 2: It's a Dog Eat Dog World
@jamieforrest They were housed in a new condo building on Bayard St, across the street from McCarren Park.
Top Chef: What did you make - Week Two?
I was surprised that Fabio won with the beef carpaccio - I really thought Jaime's really clean looking soup would take it but it seems that the best entree will always trump the best appetizer/dessert.

I'm in a dessert state of mind so I'll go with the Pumpkin Pie Brûlée!
Top Chef: What did you make - Week Two?
@sammie I kept thinking the same thing last season with Lisa and it never fickin happened.
'Top Chef' Season 5, Episode 2: It's a Dog Eat Dog World
@ dineomite Carla's "crazy eyes" scare me.
'Top Chef' Season 5, Episode 2: It's a Dog Eat Dog World
Every time Ariane survives, I think back to Lisa from season 4 and her ability to survive despite being in the bottom every week. I'm afraid Ariane will be the same - bad but not the worst each challenge and just barely scraping by.
Does anyone else notice that the producers have changed it up this season for Judges Table? Instead of having the winners and losers come out separately, they're having them come out together? It makes moments like Hosea's ("I thought I was in the top!") possible. It's tweaks like that one that keeps Top Chef on top of the cooking competition reality show heap.

Belcourt: A Hamburger for the Locavore and the Purist
Had it tonight and it was superb. Skip the cheese when ordering this one, this meat stands on its own. Fries were a bit undercooked, oil not hot enough, but the fried scallions were great.

For years I went to Martha's Vineyard in August and entertained
using a cookbook I bought at a local bakery--Scottish Bakehouse
Cookbook by Isabella White. I used it until the pages came unglued
and put a rubberband around it. Julia inspired me to just use a
cookbook as a starting point and create your own style. Thanks, Elaine

Mark Bittman's How to Cook Everything is the dirtiest (aka most used) cookbook in my kitchen, I always find inspiration in Tom Valenti's Soups, Stews, and One-Pot Meals.

The French Chef, of course! When we were married 38 years ago, my husband-to-be's next door neighbor gave us a Swing Way can opener and a copy of The French Chef. I have been using both all these years, but the French Chef has many more miles on it. I was 19, had never cooked and knew back then, in a very un-feminist way, that the way to a man's heart was through his stomach. It worked! I love this book and always will.

An autographed copy of Craig Claiborne’s New York Times Cookbook. One evening after a school dance, friends descended on my parent’s home and one of them piped up, “Where’s the eggs benedict?” I popped into the kitchen and shortly produced something resembling poached eggs with Hollandaise. (One egg never made it past the side of the stove.) From that first effort, I prepared several other winning recipes like Knockwurst in beer. Fast forward 15 years and dozens of other cookbooks and I am co-author of Passport to New York Restaurants and auction correspondent for Wine Spectator.

My favorite cookbook is the 1950's edition of the Betty Crocker Cookbook. It has wonderful recipes for baking, especially cakes. Although there is a "revised, modern" Betty Crocker Cookbook, the 1950's edition was reissued unrevised some years ago. It's worth getting if you like real American home-style baking.

The Wisdom of the Chinese Kitchen by Grace Young. The dishes really tastes like the ones I had growing up.
