Nick-I though that the care and ingredients rivaled Kenny's, though I would agree that the onions may need work at Mark. Also agree on the condiments but thought they were interesting. Also have to factor in the convenience factor-Mark is always accessible, Kenny's very limited with the addition of being able to use my cell phone at the Mark without having things thrown at me.

Ever since Richman dissed New Orleans, I've found him hard to take "seriously" but his pizza list demonstrates either a real lack of experience or simply the desire to piss people off. Even the pizzerias that he includes that I agree should be on a "top" list (e.g. Sally's), he orders something ridiculous like a potato pie. The one comment I have to agree with that he makes is that when it comes to pizza, America (specifically, IMO, NYC) has it over Italy (Napoli).

Agree with one of the above posters that Jumbo on 2nd Ave. (Manhattan) extremely underrated, and that both H&H & Ess-a-Bagel horribly overrated. Tal (a chain) is pretty decent. David on 1st Ave. had a great pumpernickel. And there's actually a good bagel now in North Brooklyn: Baker's Dozen, on Manhattan Ave. in Greenpoint. But for me, the number-one bagel is "Hot Bagels" on 79th st. & Metropolitan in Middle Village.

Manhattan: Ess-a-Bagel

Favorite used to be Bagel Zone (Ave A between 3rd St & 4th St), until they changed their name and stopped baking their own. Was the perfect bagel -- crisp on the outside, soft and bready on the inside...I'd pay a ridiculous premium just to taste one again.

I agree that Daniels in Murray Hill is pretty good. My all time Manhattan fav though, is Jumbo Hot Bagels on 56th and 2nd Ave. They are boiled, baked and delicious just like a bagel should be.

@NYC Food Guy Believe me, I want Mark to succeed as much as anyone (well maybe not as much as the owners) and I hope that my review will help improve things. @tasty trekker Thanks - it is on the radar.

@guttergouret With all due respect, you told us that they rival Kenny's but you didn't tell us why. Is the beef juicier? The bun steamed better? I don't think the fancy ketchup adds much - a properly cooked slider requires nothing in the way of condiments. Regarding the picture of the slider on Always Hungry - the cheese doesn't look melted and the onions look too charred. But to each his own.

I will return to Mark and I hope that they can approach the standard set by the great slider institutions of NJ that I have spent so much time documenting as of late.

I understand the scientific urge to use the plain bagel as one litmus, but that just aint the whole tale of the taste. And I don't get the animus all the tasters apparently have against size, especially in the rising-price world, if the maker can deliver all the qualities of outer crunch, inner chew, and flavor balance. What, we want a LITTLE bagel? Hard to take that seriously. If you can experience the fresh pumpernickel at Ess-A-Bagel and not immediately comprehend how the combination of rye-and-carraway tartness and the kiss of malt create a tension that is absolutely thrilling--the single greatest bagel experience in NY--then you aren't paying attention. This is an art object. I live down the block from Rolen and Bagel Corner in Riverdale, and every weekend I travel down to 20th and First; there isn't even a serious comparison. Incidentally, Ess-A-Bagel appears, uncredited, in the poem "Creed" by contemporary poet Meg Kearney--to my knowledge, though they have satisfied many writers and appear as props in literature , these are the only bagels actually to be celebrated in a serious work. @KingT: What would you say makes a '30s-style burger? Given what I've read about burger history, I'd guess it would either be a slider (since White Castle all but revolutionized burgerdom in the late '20s and up to WWII) or a slider-style burger (a little larger but cooked in a similar fashion).

@shanella: I'm only responsible for the first photo; the rest are Flickr Creative Commons–licensed or used with permission of the photographer. I know that any of Nick Solares's or Robyn Lee's are dSLRs (Nikon D300 and Canon 20D, respectively). Very educational for us foodies Adam. Thanks for pointing out the difference between a slider and a mini burger...i always thought they were the same. I like the part about the fast food burger! lol! I think you're right about the kobe burger cause i enjoy the slight rubberiness of the minced meat against the soft bread in a regular burger...the kobe has enough brilliance to stand on it's own! What they call pimento cheese in the U.S. is what we call cheese paste in caribbean, and is often a combination of grated cheddar, mayo, grated onion, diced peppers and hot sauce, and is usually slathered between sandwich slices, cut into cute bite size triangles and served at parties.

I realise that this is about American burgers, but just for interest: in Australia it's an "Aussie" burger if it has sliced beetroot on it (and probably onions too, though possibly raw). However, the essential ingredient to make a pizza an "Aussie pizza" is egg cracked over the top just before it's put in the oven.

In any case, I think it's the toppings that make it exciting, and the ethnic variations give you alot of options. One simple one I don't see here is the diner option topped with a big fat onion ring. The best veggie burger I ever had was at Kelsey's, when I had it it was served on a sourdough chiabata-style bun with smoked mozzarella & garlic mayonnaise
