Sunday Supper: Clam and Chorizo Stew

I'm guessing this recipe calls for Spanish chorizo since it states to "cook until chorizo is crisp" which wouldn't work with Mexican chorizo.

Hola. Me llamo Maria. My mom is from Spain so I grew up eating fried sardines, tomato salads, lentils and garlic sauteed spinach with fried eggs. I remember in elementary school returning home from a friend's house describing my meal of corndogs with mustard and begging my mom to buy them. Luckily, my mom only gave in occasionally to my tater-tot-esque cravings. I live in San Diego where I am a teacher. I enjoy experimenting with ingredients that are foreign to me as well cooking the familiar foods of my childhood. Today I just discovered birria -a Mexican stew. How could something so delicious have escaped me until now? Currently I am lusting for cherimoyas but I'm not sure when they will return to the farmer's market.

The Perfect Fried Egg Sandwich

I grew up eating fried eggs over garlicky wilted spinach. My mom would yell at me for eating around the yolk and eating all of the egg white first, piercing the yolk and watching it run all over the spinach. Then I would sop uo the yolk with whatever bread we had on hand.
No egg sandwiches in my house. My mom is from Spain and she thought foods like corndogs and mustard were weird. I can imagine her horror if we had ever dared to squirt ketchup on our eggs.
