Dinner Tonight: Chorizo and Eggs
Raisins? ¡Qué asco! I love to add a diced red bell pepper and garlic with the onions and finish it with some crumbled cotija. I also prefer turkey chorizo since pork chorizo can be too greasy.

I prefer the Italian eggplants over the globe eggplant since they seem to have less water. I wonder how the Japanese or Filipino eggplants would taste in this recipe. Anyone tried it?

I'm guessing this recipe calls for Spanish chorizo since it states to "cook until chorizo is crisp" which wouldn't work with Mexican chorizo.
