Nice! I'll be making a variation on this chili for a chili cookoff using cubes of chuck, brisket, and pork shoulder instead of the short ribs (to give it some semlance of creativity!). I've never considered using a fresh dried chili puree and I think that will give me what I need to set this dish apart.
