How can I use flavored vinegar and oil?

I recently bought some peach balsamic and it is incredible. But I too am short on ideas.

The one idea I had is to make sodas with it. A little bit of vinegar mixed with soda water. It is way better than it sounds. Sometimes I add vodka to it for a cocktail. I was told some muddled ginger and/or mint would be nice but I have yet to try it.

I have spent a lot of time on the Monterey Peninsula. It is hard to choose just one restaraunt in Monterey, one of my favorites is Montrio it is near Alvarado in Monterey. In Carmel, there are many to choose from but I have had a good time at Mundaka, La Bicyclette, Cantinetta Luca, and Casanova.

And Fifi's Bistro Cafe is another favorite. It is probably one of my favorite places in the world. It is in Pacific Grove. And is tiny so definitely make reservations.

I usually do zucchini like this with regular balsamic. But the combo of veggies looks even better! Maybe I can get my SO to eat eggplant this way.

Easy recipe for pie crust

I second the SE Cook's Illustrated pie dough. I found that using some alcohol in place of water makes a huge difference because I tend to over handle my dough. I often use applejack or brandy in place of vodka.

What to do with half of a salmon?

I bought half of a salmon. It is not a side of salmon, instead it is the tail half of a whole salmon. It is a little over 4 lbs, skin on.
How do you suggest I prepare it? I was thinking of treating it like I would a smaller whole fish. Using a cedar plank on the gas grill. Are there any special considerations for such a large piece of fish? My concerns are that 1 side will cook and the other won't and it is so large that flipping it might be a challenge once it starts to cook.
Any ideas?
