I use lard in everything! I believe that lard can be healthy if it's the right kind. You have to get the fat from naturally raised pork and preferrably render it yourself. It withstands heat much better than vegetable oil (avoiding the formation of free radicals and rancidity) and gives food an amazing flavor! I am going to try and make some biscuits tonight with it actually! I get mine from the farmer's market. No one ever wants lard, so the farmer gives it to us for free. Otherwise it would be thrown away!
