Thanks all for helping with my oven question! Another random one for you....I've been told that while most people think that you need to be grandfathered in to have a coal oven in NYC, that it's not really true, and that they are perfectly legal. Any truth to that?

Where Can I Find the Best Raw Pizza Dough for Purchase in NYC?

I love making my own dough, but I just don't have the patience to wait for it to rise, which is why I'll usually just buy it.

Trader Joe's actually has an excellent quality fresh dough....only tough part is getting there before they sell out of it for the day!

Has the NYC Department of Health Delcared War on Reheated Pizza Slices?

I've heard that a number of new DOH inspectors have been added in the last few weeks, and that they were all sent out on their own this week. They're on the war path, and because they are fresh out of DOH school they are nitpicking every little detail so that they look good for their new bosses. Ugh...fellow restaurateurs.....be afraid, be very afraid....
