First Look: Fire on the Mountain 3, Portland, OR

Wow, I can't imagine going to Fire on the Mountain, and ordering Pizza! I'm craving the wings, just thinking about that place!!!

From A Hamburger Today

Portland, OR: Marginal Thumbs-Up for Lardo's Double Burger, Big Thumbs-Up for the Fries

@Elizabeth88: YES! that sandwich is amazing. very likely my favorite in PDX.

And actually, their porchetta is pretty amazing, but I seem to feel just zapped for a day or two after eating basically a fat sandwich.

From Recipes

Brown Butter and Sage Sweet Potato Casserole

I will take this challenge. Never made marshmallows before. I still usually make the standard sweet-potato-marshmallow casserole, and although the wife loves it, I am looking for something new.

How to Roast Perfect Pumpkin Seeds

@BitchinFixins: I put them in a wired strainer (not mesh) under cold running water and shook them around. The wire took most the orange stuff off, and I just picked through a few bigger chunks.

Sunday Supper: Pierogies

The dough recipe is the same as we use. Turns out great! I usually use my food processor to do most of the work, and just knead it the final minute to smooth it out.

A Sandwich a Day: Pan-Seared Porchetta at Laurelhurst Market in Portland, OR

I agree with CptJake, Lardo is amazing. Much more meat, and they have a caper aioli mmmmmmm.

However, Laurelhurst Market does have some great steaks!

Looks nice and fresh!

Make sure to soak and rinse your quinoa unless you bought pre-washed though.

Is the Thermapen worth it?

IMO: yes, yes, yes. I hear people complain all the time about meat not being done right, overbaking, etc. This is all solved with a thermometer. I got my Thermapen about a year ago, and it's hands down the best I've used. I've heard they are very durable as well. You can get thermometers for considerably less, but they will indeed crap out on you, probably when you want to use it most.

tldr; just get it. :)

Chain Reaction: Yard House

wow, I've eaten there well over a dozen times, and never thought to try their burger. Their other food is typically very good.

From A Hamburger Today

Chain Reaction: Ruby Tuesday

Sorry, but I enjoy their triple prime burger. They grind it fresh, and will cook it medium rare for me, unlike almost anywhere else. Also, their croutons are the bomb!

But yes, there are many just so-so items on their menu.

The United States of Pizza: Minnesota

How did they compile that list? Where is Mesa? Where is Pino's? And what the hell is Sammy's doing on there?

From A Hamburger Today

Chain Reaction: Burgerville

These descriptions are pretty accurate, but I still enjoy the food here more than McD's, and BK. I would much prefer my food to be undersalted, and add my own later.

Some more Burgerville Protips: The strawberry shakes in the summer are amazing, they use fresh local strawberries. Also, the rosemary shoestring fries (seasonal) are also very good. And my favorite is ordering a side of the garlic aioli. Makes the mediocre fries awesome.

Lou Malnati's: Quintessential Deep Dish Pizza

My lovely wife got ordered me 4 pizzas by mail for christmas (Lou's is a mandatory destination when I visit Chicago). I was surprised that I like the pepperoni almost as much as the sausage (almost). They seemed to come par-baked, and you can bake them up straight out of the freezer. They were very good, but not quite as good as the real deal at the restaurant.

Probably one of the better christmas presents I've gotten!

Behind-the-Scenes Kitchen Tour of Pok Pok in Portland, Oregon

I agree, the wings are pretty amazing. Not really sure why, as I'm not a huge fan of fish sauce, but something about it works, and works very well.

From Slice

Hood River, Oregon: Double Mountain Brewery

The wife an I went there for the beer (which was great), but the pizza was indeed excellent as well!

If you are in the Portland area, I'd highly recommend a trip up to Hood River. Beware, Double Mountain does get busy.

From Recipes

Classic Sage and Sausage Stuffing (or Dressing)

Made this yesterday for thanksgiving. everyone agreed it was fantastic! It was my wife and my favorite part of the meal, actually! I also threw in a couple of peeled and diced apples in with the veggies.

My one note is that it made WAY too much for a 13x9 pan, so I put the remainder in a freezer bag.

The United States of Pizza: Hawaii

I do really miss Pizza Bob's in Hale'iwa on Oahu. If you're up there, and need a snack, it's a great place. Sit outside if you can.

I actually think Boston's is pretty decent. not anything to go out of your way for, but pretty solid. I've only been to the one in Kapolei.
