Raphael, this is an amazing list you have compiled. Tongs are seriously one of the most underrated kitchen tools of all time. Thank you for bringing this to the attention of those not in the know! I would make one additional recommendation (already in this thread): mortar & pestle. It's environmentally friendly, and if you go ask Alice, there's no other way to make pesto.

This is an aberration of unholy proportions. I pity the poor madeleines who have to suffer through their short lives jammed with this vile synthetic substance. yuck!

Baking With Dorie: Fluff-Filled Chocolate Madeleines

I made these as a Christmas gift for someone earlier this week and had a TERRIBLE time piping the fluff into the cookie. The fluff I bought was thick and VERY sticky and almost impossible to push out of the pastry bag. Some of the cookies had literally a dot of filling because that was all I could push out. Is there some secret to doing this? Are there brands of fluff that are easier to work with?

@Tactful, I've never had problems with the pasta attachments, either.

And I've got it all except the pepper mill (but I have others that I like, each filled with a different pepper), the fish spatula (looking for one I like -- that one looks good, though), and the book. I've got lotsa books. Wonder if I need that one in particular. Sigh. Time to look at the wishlist again before I email it to santa.

Dorie, have you ever seen Fluff in Paris? Once when I was in Le Bon Marche there was a whole display of them...next to fancy jewelry. Obviously just for show (or maybe people did buy them!), but it was funny to see it in that high-class context.
