How do you make chocolate chip cookies?

lots of people swear by adding a package of instant vanilla pudding to the dough. i've tried it, and it's delicious, especially if you like your cookies extra chewy.

Mill for sure. Shakers are too risky cause people will loosen the top, and next time you go to shake a lil' seasoning on your dinner, it's covered in pepper and you're sneezing. Not that I would know :)

my mom makes a deadly curry. very finely minced fresh cilantro, basil, or mint works wonders for the sauce, with the amounts depending on your taste. i like my food spicy, so lots of cilantro does the trick. i really recommend trying it.

has anyone had a panzarotti from ikea? it's like a pizza pocket. i'm from orange county so maybe they only have it on the west coast? they are delicious.

Interesting lecture that all foodies should watch!

i just watched the video, very interesting! in was born in 1988, and i grew up eating all that bad fast food that bittman refers to. the benefits of no longer eating meat from a health standpoint would certainly be positive, but what about the influence that meat dishes have on the culture of food in America? chicken pot pie, buffalo wings, fried chicken, steak, hot dogs, hamburgers, cheesesteaks, turkey dinners... these are all national classics... would you be able to give them up?

macaroni & cheese. it's such an easy comfort food. i flavor the bechamel sauce with something unexpected, like a bay leaf and whole peppercorns or a sprig of fresh mint. my girlfriend is obsessed with mac & cheese so i just borrowed from all different recipes on the internet and it worked out awesome.

Pepper must be ground before use, lest all those lovely volatile oils escape... BUT if you don't want to waste the shaker why not use it for something else? Home-made garam masala? Chili pepper flakes? Another type of salt???

^Just to add a note of agreement to the no-cream proponents--the ATK recipe and its many Internet versions calls for melted butter rather than room temperature, to give added density and have even less air in the mix. Makes the cookie more chewy--that's why lots of brownies and blondies have melted rather than room temperature blondies.

I got my recipe from the pastry chef at a fine dining establishment I worked at while in culinary school in San Francisco. It's the perfect mix of crunchy edges and chewy middle, with a serious whiff of vanilla and the most chip-to-cookie ratio I've ever come across. The secret? Most, if not all recipes tell you to cream the butter and sugar until fluffy - which helps to leaven the cookie while baking - he on the other hand told me to just mix the butter and sugar until incorporated, none of that fluffy stuff. This is what makes the cookie crunchy and chewy at the same time. It really is the best chocolate chip cookie recipe I've ever used. I make the whole recipe - which is a ton because it's written for the restaurant, and keep what I don't use in the freeze until I get a jones for warm chocolate chip cookies. O the unbaked cookie dough rocks too!

@Calichef - i took your advise and bought a high powered drill like Alton to grind my pepper corns. Ok, you caught me in a fib. I can't believe I didn't think to use my coffee grinder for pepper. Thanks for the tip!

I always use a mill, too.

@PerkyMac- Cheff'n makes a good peppermill/salt shaker combo. I've had mine for more than 10 years. It's acrylic, has an adjustable grind and a salt shaker in the top. (I drilled the holes a little bigger so kosher salt will fit through them!)

If I need a large quantity of pepper for something, I just grind it in my spice mill, the one that used to be a coffee grinder. :-) Of course, you could hook your pepper mill to a drill like Alton Brown. LOL!

Mills, of course. But does anyone know of a battery-powered mill which won't break on the slightest tumble? I have a dozen of two different brands which I bought on sale recently because I love their one-handed ease of use. However, three of them have already been broken because their flimsy plastic housings have tiny flanges which snap far too easily if they should suffer even a short fall.

FFC -- I just thought you could combine your love of food and assembling things into one activity and perhaps make a bird feeder, or a cutting board.

The vision of candy bars being dissected, and reassembled with PB, then frozen in some sort of Frankenbar will be with me for a while. Better candy than cats though. :]

PS. Try caramel to hold those bits together. Freezing though will create separation especially if they haven't been melted together. Harold McGee's On Food and Cooking: The science and lore of the Kitchen could be very helpful with your chemistry experiments. Remember, always wear safety glasses.

Frozen Candy?

I loved frozen Charleston Chew back in the day, but I tried one last year (?)and it wasn't the same. The candy might have been stale. Or my tastebuds changed. :(

I have a bag of Cadbury Mini Eggs (the hard ones with the candy shell, not the creme eggs) in my freezer right now. They've been there since March. I haven't been able to eat straight up chocolate since February, and since those little suckers only come out once a year I decided to snag a bag and freeze it so I could have some when my chocolate aversion subsides. Every so often my son will open the freezer, gaze longingly at the purple bag and say "I sure hope you can eat chocolate again soon." Yeah, like I'm going to share those with you after a 9 months chocolate hiatus. Poor kid is delusional.

I also read here about the Indiana Jones Snickers bar that has coconut and haven't been able to find that anywhere--as I'm a coconut lover I believe this would be my perfect candy bar.

@lattelatte -- I love cauliflower and potatoes in it. Chick peas are good, and so are peas. Sweet Potatoes or Butternut squash. I have also used zucchini and eggplant in it with great success (although I am the only one in the family that likes eggplant enough to cook it this way!). Lentils are lovely, too -- especially with loads of spinach!

Just use your imagination. This sauce is so flavorful, and so delicious, the sky's the limit with this recipe!
