In all honesty, if you can follow a map you could probably create one. Schematics and prototypes(atleast mine) look much more complicated than they really are. I may do a step by step walk through if I gest some boards made up. Than if you could solder and follow pictures you could make one. If you can't solder...well hopefully you know someone that can:)
It would definitely be cheaper than a sois vide magic.
It looks much worse than it is. I'm hoping to get some circuit boards made so I can build some up for a few friends that want them. That would clean the entire thing up quite a bit.
I tried the pot and ice, but I just didn't have the patience to sit around and watch it:)
I finally finished up my project of turning my crock pot into a sous vide cooker. Total cost was about $25. Total time was about 20 hours:p Was it worth the money I saved? probably not, but it impresses my friends with both "geekness" of it and the food!
I did a short write up of the project, so if any of you are technically adept, you can make your own for dirt cheap and no design time.

@derosa you actually just run hot tap water?
My first ghetto sous vide was on the stove top where I just added cold tap water to keep temps down. It worked ok, but was not worth the hassle of watching it for an hour.
