@SamLRoth, I think aside from the taste, raw milk also retains a host of nutrients and enzymes that get lost in the pasteurization process (which heats milk above 150º. (I only heat milk to 110º max). Plus, if you're going the low heat route (to preserve all those good things), I think raw milk is going to be safer and last longer.
I also don't have any fancy equipment and just keep it in the oven at around 95º (using pilot light, or turning oven on at lowest setting for a couple minutes periodically) for 8 hours. If you're curious, complete recipe is on my blog Occidental City: Turn sour milk into delicious yogurt.
