Bizarre Foods: Andrew Zimmern Meets His Match in Thailand

@travels4food - I completely agree. Not having tried durian before but having seen both Simmern and Bourdain try it I'm curious ut cautious. It seems like one of those foods that some love and others hate, even with in the culture.

Its hard to have a show titled Bizarre Foods and not run into some strange subsistence-diet-type foods. It isn't a show designed to give restaurant recommendations for travellers. Its designed to say "Wow...people who are different from me eat different things. Lets try some." How many of us would be willing to do this when visitng a different culture?

Cook the Book: 'My Bread'

A cheddar garlic loaf and the first time I made it without any mixers since I didn't have the right attachments. I beat that bread into submission with a wooden spoon and nothing could have tasted better. :)

It seems wrong to put huge chains like Burger King next to Hardee's that doesn't even exist in a lot of the US anymore. How can it be an even pairing?

'Don't Confuse the Experience with the Product'

There is a woman in my town that makes homemade Thai food. You ask most people in town who they prefer to go to for Thai and hands down they are headed to Aoy's. She greets customer's with a "Hey boyfriend/girlfriend! I haven't seen you in a while, you cheating on me with China Buffet?" She talks to people and does a ton of community charity work. Every night she takes her phone off the hook for a few hours because she can't keep up with the call-ins. If you want dinner, you have to go order in person.

This is a case for the experience is what draws people, not the food. Yes, sometimes the food forces you to stand up and take notice, but more often than not its just "ok" Thai food. but Aoy will always be Aoy and you can't beat that experience.

Affordable Chicago Food Tour

@chgoeditor: I'm posting this in additions to some of the other threads I've seen. Mostly due to the affordable option. A lot of the threads I've seen give preference to good food at a pricey price and I want to stay away from that if I can. Although, if you know of a thread that already covered this then show me the way and I'll declare this one unnecessary.

I've been to Chicago a couple times and have always managed to find good food at a reasonable price; this is the first time I really have the time to explore what the neighborhoods have to offer so I want to make sure I take advantage of that.

@andshewas: I'm staying in a few different places actually. With a colleague's sister in Lincoln Park, a friend's apartment who goes to De Paul, and a cousin's house who lives in a 'burb, but don't ask me which because I can't remember and haven't gotten directions yet. I'm planning on getting a metra/train pass for the week and just cruising around town (so any addresses or links with addresses are awesome so I can actually get to them).

Served: Reservations or Lack Thereof

@GoodEaterKenji, I respectfully disagree. I think its important for customers to know (in situations like this) that an exception has been made. If not, when this woman comes in two weeks later and the restaurant is hopping she wondoesn't expect the same reception if half her party is missing.

While I agree that a guest is favoring you with their business, I feel many guests forget, that a restaurant or bar is indeed a business. Businesses have policies for a reason. Yes, sometimes they can be changed, but it is at the discretion of the business, not the guest.

Also, I think that the way that exception is phrased can make a difference. For example, if a guest has been incredibly sweet and I make an exception it could be seen as a reinforcement of that sweet behavior and my way of thanking them. "Since you've been so understanding, I can show you to your table early, but just this once."

What I Like About the Corn Syrup Commercials

In addition to the note about Gatorade as having some benefits for atheletes, it is often recommended by doctors and nurses (at least I've had it recommended) when a person has a stomch virus. The minerals in water can cause more vomiting than the Gatorade would thereby putting a person at risk for dehydration. In an instance like that the benefits of keeping any fluids down outwiegh the risks of the HFCS (I'll take a little corn syrup over dehydration anyday).

Outside of that, I completely agree with the OP. The message is do your research (not that it helps the HFCS people if you do) and that's admirable!

My high school would sell our own version's of Shamrock shakes as a fundraiser for one of the clubs. They didn't have any mint in them, but we waited al year to taste those shakes. So good!

St. Louis Trip Next Month

The City Grocer's on 10th and Olive serves turtle soup on Fridays. Mmmm if you're into soups, stop and get some. The chef who makes it is there in the afternoon and was more than happy to chat about how he makes it.

There is also a Thai bistro on 13th (I think) and Olive that serves delicious food (possibly not all Thai...but good food at a good price).

Both places are close to the Drury Inn and the Arch. If you watch, the street numbers will go up the further you are from the river. I was just there a week ago and it's true, food is hard to find in that area, but once we found a local place the food was always good. Have fun!

The Great Fast-Food Wings Taste Test

I agree with the distate left in my mouth over the anti-chain bashing. You probably know where to get the best wings in your town (I know I do!) But what about those people who don't have a "wing place" in town? For some people its fas food or nothing. And I don't have the money to waste on the worst chicken wings. I appreciate when Serious Eats does stories like this because it saves me time, money, and a lot of frustration.

So thank you for your stomach's time, Erin! I will agree with the decision to put KFC out there as the best all around fast-food wing place. They do the best they can as a chain :)

Store-Bought Chicken Stocks, Reviewed: Which Are the Best?

Normally I read these and find out that I've been using the worst of the bunch. I got to be pleasantly surprised today when Kitchen Basics (my go to brand for stock) got a top place!

I agree that while time isn't really the issue (see oven or crock pot method) ... space is a constraint for many, myself included, when considering making stock. I recently made a turkey stock and plan on freezing it in an icecube tray to cut down on bulky tubs of frozen liquid.

"Secrets of a Restaurant Chef"

I gues I really didn't notice the "odd" way of talking about cooking since that's what I say sometimes. I think sometimes your really just have some random brown crud leftover. Wh cares how it got there, what it came from...its a fast way to refer to something then I'm all for that when in the kitchen.

THe same thing goes for abbreviations, pet names, or nicknames for food products. As long as your audience knows what you're talking about then you're fine. I don't always call everything I'm cooking with by its proper name...why should someone who is supposed to be personable and relatable do it?

absentminded kitchen disasters

A ffriend and I once decided that we wanted to make dinner for her family ( we were about 14 at the time so it was a big deal to make food) After dinner (no problems there) we were whipping egg whites to top the rice pudding. Absentminded me forgot to take the spoon out of the mixer after checking our peaks. We turn the mixer on and hear: CLATTER CLATTER WOoOOSH BANG! As the spoon flies across the room spreading half whipped egg whites around the entire kitchen we dropped to the ground and my friend's mom came running.

The rice pudding came out fine but ever since, I'm extra careful with utensils and mixers.

Does Topping Order Matter?

1. Slice of bread
2. Meats (if there are multiple types then I vary them, ie: turkey chicken)
3. cheese
4. Another layer of meats
5. Tomato
6. Lettuce (leaf lettuce that i've ripped into bite sized pieces, but not shredded)
7. Salt and pepper
8. A little olive oil
9. Slice of bread...then I cut it in half (always)

Do you eat in bed?

We eat in bed frequently...much to my displeasure. No don't get me wrong, I'm all for the occasionall cozy-up-to-a-good-book-hot-chocolate-and-cookies kind of bed munching. But I hate that the majority of my meals are infront of the t.v. in bed. I grew up in a pretty strict household where all meals were at the dining room table with the television and radio turned off. It was a treat if we had pizza and watched a movie in the living room (and a production at that...there were never enough seats).

In my dream home the dining room table is always clean and ready to be eaten upon for every meal.

We always used a simplified, shortcut version of this. Cream of chicken soup, broccoli, chicken, shredded cheese and bread crumbs on top. We never put toast on the bottom...at least not in my remembering.

Best TV Chef? Worst TV Chef?

Alton Brown is my go to guy when i need to know the "how" of something. If I need any technical details or want to know the background on something he usually will tell me. Some of his recipes are bland, but I like using them as building blocks.

I love Paula Dean's recipes. I think she has been a little over exposed on FN, but I still love her food. Its that rich,creamy thing that just gets me!

As far as actual chefs go I have a soft spot for Emeril. Even though most of his recipes are too involved or expensive for me I enjoy watching him. He's the guy that got me watching FN in the first place.
