Meat Lite: Potato Crusted Sausage, Leek and Spinach Quiche
i made a vegetarian version of this (mushrooms instead of sausage), and thought it was quite good. I had some leftover filling and potato as well, so i made mini quiches in a muffin tin. Those were also great and a good size to take for lunch.

Cook the Book: 'New Classic Family Dinners'
My mom used to make what we called 'cub scout casserole', which was basically a chili and fritos casserole...not the healthiest thing in the world, but boy did we love it!
Other than that, we used to wait in anticipation to go to my grandmother's house where she'd always make us sushi! It didn't matter what the occasion was. She always made 3 types - tamago, inarizushi, and one that was a combo of smoked fish, shiitake, pickled gourd, beni shoga, and i'm sure some other stuff.

Parents with different nationalities, what do you still make?
my mom is japanese, and my dad is american (mostly irish). while i was growing up, my mom's mom asked me which i liked more, potatoes or rice, my guess is to assess my cultural identity. being the diplomat that i am, i told her that i really like them both the same. she nodded he head and seemed to accept that answer.
i cook a lot of japanese food, more than my mother ever did. i'm just trying to learn from my grandma while i still have the opportunity.

My go-to quick meal is one egg, fried over-hard with some soy sauce drizzled on top between 2 pieces of toast .
...i also grew up thinking the only way to make an omelette was with some scallions mixed in served with rice and soy sauce.

Layer sauerkraut in a casserole dish, place pork chops on top and season (I use cracked black pepper, garlic powder and smoked paprika), cover with lid or seal with foil, bake in 400 degree oven for 45 minutes. I like to make mashed potatoes with it, but have also just done steamed veggies on the side.
