I agree with Tessofduber's opinion. But here in China, most well known dishes have a widely accepted and appreciated version which usually being considered authentic!
My chef team plus myself had no experience in neither cooking western cuisine nor making dairy products. So it's abut of problem for us and it's difficult to buy some of the ingredients locally I guess. I'll share my thoughts once we make it happen.
Thank you so much for providing me the information, I guess I know where to start and im going to discuss with my team the possibility of making them and serving poutine in my restaurant! Yeah!
