Has anyone tried the Pho recipe posted here?

I agree with Tessofduber's opinion. But here in China, most well known dishes have a widely accepted and appreciated version which usually being considered authentic!

My chef team plus myself had no experience in neither cooking western cuisine nor making dairy products. So it's abut of problem for us and it's difficult to buy some of the ingredients locally I guess. I'll share my thoughts once we make it happen.

I'm in a city has 7 million population here in southern China, but a good bowl of Vietnamese Pho is nowhere to be found, so I have to make it myself.

I have two cafes in my hometown Fuzhou, China, where it is impossible find cheese curds, but I really want to serve poutine in my restaurants, is there a way of making it in house?
