Really good recipe, liked crispness and light consistency. However found it lacked flavour, added vanilla extract. What a difference, with vanilla extract, this recipe is requested over and over. Also, great to reheat, in toaster at work. Will make again and again

He sold the best vegetable peeler in the world! I saw his daughter selling them earlier this year, if I ever do so again, I'll buy a bunch of them. And I'll check out Chef Tools.
But Mr. Ades will be missed. RIP, and condolences to his near and dear.

This recipe was in the Betty Crocker Cookbook for years a "Best Ever Waffles." It is not in the current edition.
I made it for my family for 40 years. Every time I try somethig different, it just doesn't measure up and I come back to this recipe. It is more complicated than a mix but it is still not difficult.
Sunday Brunch: The Greatest Waffle Recipe Ever
Here's the best recipe ever. It's so good, it's written in marker on both my waffle irons so I don't ever have to look up the recipe. Recipe courtesy of Cooks Illustrated.
1 cup unbleached all-purpose flour
1 tablespoon cornmeal (optional)
1/2 teaspoon table salt
1 teaspoon baking soda
1 egg , separated
7/8 cup buttermilk
2 tablespoons unsalted butter , melted
Instructions
1. Heat waffle iron. Whisk dry ingredients together in a medium bowl. Whisk yolk with buttermilk and butter.
2. Beat egg white until it just holds a 2-inch peak.
3. Add liquid ingredients to dry ingredients in a thin steady stream while gently mixing with a rubber spatula; be careful not to add liquid faster than you can incorporate it. Toward end of mixing, use a folding motion to incorporate ingredients; gently fold egg white into batter.
4. Spread appropriate amount of batter onto waffle iron. Following manufacturer’s instructions, cook waffle until golden brown, 2 to 5 minutes. Serve immediately. (You can keep waffles warm on a wire rack in a 200-degree oven for up to 5 minutes.)

She uses the egg whites, as well as buttermilk. There is also a little cornstarch in it. I will try the suggestion of putting a little vanilla in, but as written Pam's recipe has never failed to get raves. They are light, crispy, and so yummy!

I have never been to NY and totally missed out on him and his peeler I'm sure I would have bought 5 if not 10 as I'm a gadget freak and hoarder [ it drives my wife crazy ] but would have shared some with family and friends , hence the purchase of 10 . Will try the site mentioned to get some , if they arent the same product and somebody finds a source for the real thing , maybe his family , please post it for all of us who missed out on it . Maybe the ZAM-WOW , CHOPPY/GRATY guy is gonna pick up on it , if so hope he keeps the price down and quality the same .
No matter what 'Joe Ades' will be missed , what an individual !

I JUST saw him recently at Macys and then at Unions Square about a month ago. He looked fine! I am shocked (was in LA for 3 weeks so didnt see this news). I am sorry now I did not ever buy a peeler. But I did always stop and listen for a bit. He will be missed- a true New Yorker!!!

A little more than a month ago I saw him coming up the stairs at the subway stop on 86th and Lex and he seemed to be struggling with his luggage carrier. When I tried to help he refused....

He used to show up once in a while near Court Street in Brooklyn. He was always fascinating to watch. I just mentioned to my co-worker that he passed away and she said she had bought four of his peelers,but that she could never work them like him. After reading several stories about him on the Internet, I'm sorry I didn't ever buy a peeler. I just hope Mrs. Ades reads some of the posts about him to see how much people will miss him, even though they didn't even know his name. Whether he made a fortune doing it or just got by, I won't feel differetly either way, although I'd kind of like to know. He reminds me of that pitchman in an old Twlight Zone episode. I hope he got to make one last, great pitch before he moved on.

he was somethin' i bought a peeler from him years ago and loved it! it did everything he said it could. then a roommate moved out and took it. bought another one, and another roommate took it. i guess i really should have gotten 5 for $20. he is one of the many reasons i love NY! i could buy a replacement from some online store, but it wouldn't be the same...buying something from a soul less corporation. RIP mr. ades, we will really miss you!

I loved seeing this guy. In a city where most of us are largely anonymous, it was comforting to see familiar faces and Joe Ades was one of them. Rest in peace Mr. Ades. I wish I had bought a peeler from you when I had the chance.

It's the Star Peeler, and you can find them online. Though I (like so many others) finally broke down after years and bought one from Joe. It really is a great little peeler.
I saw him in Union Square a few weeks ago, and thought that he looked really sweaty (on a cool day) and unwell. :::sigh::: Rest in peels, Joe.

aw i love this guy! my aunt and uncle have lived in union square for decades and i lived with them for awhile....every saturday at the market i'd chill with joe for a few minutes - gotta admit i never bought a peeler though. rip joe!

Last spring when I went to the Whitney Biennial (God knows why I do this this every other year, the art is so disappointing that I fear for the future of culture in this country) a familiar voice stopped me in my tracks. It came from the video portion of an installation piece. There was Joe Ades doing his peeler thing voice booming out of the sound system and image, as dapper as ever, for all to see. Just by chance I happened to see him a week later at his spot at Union Square. I went up to him and told him about his cameo at the Whitney. "Yes, yes, he bellowed at me, 'I know, I know'. And without missing so much as a beet (Ok, forgive me that one) he kept on peeling. I'll miss him.
