Searching for America's Best Yakitori

We were in the same situation! After returning from Japan and having the best yakitori of our life in Kyoto, we were in search of good yakitori in the US, only to be disappointed by dried chicken slathered with teriyaki sauce. Our favorite so far is in little Osaka in L.A. called Yakitoriya. They use real binchotan, which is key in good yakitori.

Nick, I would also wash the fish with a little shioxing wine to impart more flavor. Then stuff the inside with the white part of the scallion and ginger.

I would serve the fish whole and garnish with come cilantro and fried garlic chips.
