toastykitten must have been thinking of Chinese herbal medicine - Chinese soups, particularly Cantonese ones, can be incredibly tasty and consomme-like. It's one of the only things I crave when I'm away from home.

@clapper & @Monsieur_Ghislain re: beef/pork, I believe the original legend/story does quote beef usage, but pork is arguably more common in China and cheaper, so you'll mostly find pork versions nowadays.
Also, I don't think there are many good Sichuan restaurants in Hong Kong so it's probably not the best comparison - I wonder how Fuloon's version compares to a good one in Sichuan? :P
