Salted Water for Boiling Is Most Commented-on Recipe on Epicurious
It does bring the temperature of the water up about 2 degrees, helping to cook the pasta faster, while also flavoring it.
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'

@Michele Humes, you are just as incorrect as gschaefer.
o raise the boiling point of one liter (34 ounces) of water by 1°C (1.8°F) requires about 58 grams (2 ounces) of salt.

Adding salt to water raises its boiling point. Chemically speaking, this is a verifiable fact. Salt does raise water’s boiling point (and lower its freezing point—which is why home ice cream makers use rock salt).

@dyella - A combination of 'What Einstein Told His Cook' by Robert Wolke (relevant excerpt is here) and my science editor boyfriend explaining it to me in a painstaking manner.

I've interviewed several chefs about this subject and they all seem to use the metaphor "as salty as the ocean" to describe how salty the water should be. Seems pretty apt if you've ever accidentally gulped a mouthful while playing in the waves!

'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
Even though Stefan is a bit of an ass, he's a refreshing change from previous seasons in that he's a jerky chef who can actually bring the cooking. What drove me crazy about Lisa last season was that she had all the arrogance and superior attitude of a master chef, but with a fraction of the talent.
Toby...my God, what a douche. I was actually tolerating his presence until he pulled out that ridiculously contrived line about Elvis. He's just embarrassing himself.

I'll add one important factor ~ I ruined a pot by putting in the salt (kosher, I think) before the water boiled and it pitted the bottom.
The Nicole Richie one hurled me to the floor, too. Can't wait to read them!

@gschaefer - If you read the link I included in the post, you'll see that, while adding salt to boiling water does technically make it boil faster at sea level, with the quantities we are dealing with in home cooking, this speeds up the cooking time by all of half a second.
@dyella - It's not two degrees. It's about seven hundredths of 1 degree F.
Sigh. Why is this misinformation so persistent? :/
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
This is a bit late, since I DVR this show and watch at my leisure the next night.
Stephan will win. He's got the goods, confidence and he's the best chef. Leah needs to go. I agree that it will come down to Jamie and Stephan as the main contenders but still think Stephan will grab it.

Service matters people! I could sell ice to eskimoes (sorry for the cliche) but it is true. You wrap something not so pretty in pretty paper and it makes a difference.
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
Best lines from this episode:
Hosea (to Leah): Taste this.
Leah (to Hosea): It needs more salt.
That's all.
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
Don't hate me.....I want Stephan to win! I think he is the only person on the show with talent and he knows it, which must make him a horrible person to be around and an awful competitor, but he's a good chef and I'd eat his food! Plus I love that kind of confidence in people, even if it's ostracizing. Jamie is so glum. Smile girl! Have a little joie de vivre! And cook something else besides soup and corn (and scallops). I agree that Hosea is the quiet competition and I predict that he will make it into the final three, along with Jamie and Stephan. I like Fabio as a person, but he keeps making small mistakes that will probably cost him. Carla is also funny and charming, but I don't think she's much of a cook. Leah is a total sourpuss princess brat and Jeff awkwardly over-extends himself every time. Even when he limits himself to one concept its like, oversized or something. That HUGE hunk of salmon he made for the "tasting" in the QF?! What?! And Toby Young, words don't describe. My ears gush forth blood when he opens his mouth. Sorry....
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
I think Fabio is going to leave before Jeff. Jeff makes poor planning decisions, but reminds me of Hung in how fast and accurate he can do multiple processes.
'Top Chef' Season 5, Episode 9: 'It Amused My Bouche'
@mgnnn: Seriously. You'd think they'd all be prepared for this and other things. I mean, it's like this group never watched previous seasons. They've repeated so many mistakes that contestants in prior seasons have made. There's definitely enough material for any contestants now to learn how to play the game.
