Well, these can't be bad! Since I never met a potato I didn't like adn these are all about potato, that its a cinch to be great. aslo, if you suffer from the "O" syndrome, like I do ... Frito, Dorito, Cheeto, Tostito, Potato chip ... well, Super bowl Sunday is the king daddy of junk food! Add a few ings and LOTS of bleu cheese to dip them in and there ya have a little bit o' heaven. Oh, don't forget to crumble good bleu cheese over kettle or home made potato chips and melt the cheese ... that says it all.

Delicious pancake recipe, with the best tangy ricotta flavor I've had yet, but I was disappointed they weren't fluffier with all those egg whites. Maybe I overworked the batter, but these weren't even half as thick as my usual buttermilk pancakes. the lemon curd was delicious though, and great on cold leftover pancakes.

I gave these a shot this week and found the pancakes a little too delicately flavored for the lemon curd. If you want the pancakes to lead, use a bit less curd.

I'm also learning that I think I prefer dense, buttermilk-style pancakes to the lighter and fluffier egg-white variety.

Resolution: FAIL! Though all New Year resolutions are already a thing of the past, I had at least decided that this week I would NOT stop off at the store on the way home to pick up this or that ingredient for dinner, but would only use what I have in the house - until this recipe! You wouldn't believe me if I said this but *THIS* is something I made when I was a kid home alone! My parents wouldn't let me use the stove, so I wasn't allowed to "cook" a whole lot. Oh, how it reminds me of my childhood back in Taiwan! What we called "oranges" in Taiwan are actually clementines, and I would juice the crap out of them, pour the juice in to the blender with some ice and sugar and just eat spoonfuls of it, while enjoying my pseudo-kitchen prowess.

if it weren't for all the egg yolks, i'd smear curd over everything i ate. my goal in life is to turn all fruits into curds, although so far i've only succeeded with mango-lime and passionfruit.
