Meat Lite: Warm Winter Salad
this was amazing. i didn't use the proscuitto since i'm vegetarian. i also substituted yams for the butternut, since that's what i had and a rosemary loaf for the multigrain loaf. easy to make and great for leftovers the next day. i can imagine tons of good substitutes and i'm thinking crumbled blue cheese on top wouldn't hurt in place of the romano.

Thank you for writing this! I gave up meat when I was twelve, not for animal welfare reasons, but because I hated how unpredictable it was to eat meat. Also, there are bones, veins, fat, etc. and it always grossed me out. I think the people that hate tofu are expecting it to really replace meat, but to me it's just a good alternative. I really don't like boca burgers or other meat alternatives that try to taste like meat. People should think of it as an alternate source of protein, not a meat substitute.
