Glad to see the focus turning back to service. Someone once said (I think it was Dale) "The most important thing in your bar is the door".
I never saw the appeal of the "speakeasy". During prohibition, drinks were horrible, unless you could afford the good stuff and knew someone or somewhere to get it. Otherwise you were drinking bath tub gin, watered down whiskey and wine with all sort of of 'special' ingredients that could kill you.
Of course, the dress of the speakeasy mixologist is also more 1890s than 1920s, but what are ya going to do.
