The general consensus was that although these were good cookies, they just weren't Oreos. I was going to give this 4 stars, but the rest of the family voted 3, so I gave in to peer pressure. Here are some changes I would make:

- Only bake for 10 minutes. I baked mine this long, and a few got too toasty anyway.
- Ditch the espresso powder. Everyone agreed that this made the cookies too bitter and did not belong in Oreos

While the cookies could use some work, I thought the filling tasted just like Oreo filling.

Bread Baking: Caramel Apple Bread

Made this yesterday and it was delicious. Even though our ovens broke (both! at the same time!) and I had to keep the dough in the refrigerator for two days, it still came out great. I couldn't find any dulce de leche, so I melted a bag of caramels with some butter and water, and it worked perfectly (if you go this route, note that I used the entire bag for a *double batch* of bread). If for some reason you can't eat all of it while it's still warm from the oven, toast it and slather on some butter.... so good. Just don't be surprised if you experience a breadgasm ;)
