Some time ago, I had a BBQ at my place and decided to smoke some pork shoulder to make pulled pork BBQ sandwiches, using Perry Lang's recipe from Food + Wine several years ago. knowing how delicious it would be and wanting leftovers, I smoked approxmiately 10 extra pounds of pork for the 25 people that would be coming. After an exhausting 8-9 hours of smoking (and carefully monitoring the temperature of the beer in my coolers), I served up the food, and relaxed while everybody helped themselves. Imagine my surprise, 20 minutes later, when my wife told me that we were out of pork. All the guests were full and happy, but I had to make do with some chicken for myself.
