DIY Irish Cream

I have made home made Irish Cream for about 20 yeqrs using a slightly different recipe. I started using Jim Beam whiskey about 10 years ago and like it a bit better than using the more expensive Irish whisky.

Food Commercials? Which ones tempt you (or not) the most?

Love the Jimmie Dean sausage commercials, love the Dos xx commercials, hate anything that the champion of bland (mcdonalds) has. While Red Lobster looks great, the actual portions are 1/3 the size and not that great.

Drinking the Bottom Shelf: Old Crow Reserve

When I was a freshman or junior in college (1970-1971) someone gave my Baptist mother a fifth of 100 proof Wild Turkey. She would occasionally use it when she made boiled custard. One Christmas I noticed that she had barely used it. I promptly bought a fifth of Old Crow 100 proof and swithed out the bottles. She of course could never tell the difference and I had a wonderful bottle of Wild Turkey.

Regional Chain Restaurants

I have quit ordering chocolate malts at Braum's. I have tried 3 separate Braum's in Irving, TX and can't taste the malt. The mix they use is not good. Might as well be a milkshake. Whataburger malts taste much better. I expected a lot more out of an ice cream shop. Their burgers and steak sandwiches pretty good though.

The Serious Eats Barbecue Style Guide

Native born Texan but very good at making Western North Carolina bbq. Mine comes out better than my brisquet. Went to Cooper's new restaurant in Ft. Worth this fall to sample the famous central Texas bbq. I was very disappointed. Chopped brisquet sandwich very average at best. Probably will not go back. Favorite bbq joint is Red Bridges in Shelby NC.

Thanksgiving Sides: Stuffing and Dressing

Vaxon and I must have had the same Texas grandmother. That is just about the recipe I use. I do put biscuits into it however. Older brother married a lady from Michigan who had daughter and son. They married and left home some years ago. A few years ago they were preparing Thanksgiving dinner at their house. The daughter asked what could she do. My brother said she could start the dressing. The daughter proceeded to take white bread and start to crumble it into the roaster. Brother's response was "WHAT THE HELL ARE YOU DOING!!! She was immediately told to start the cornbread.

Taste Test: Root Beer

I will give Barq's another try. I truly like IBC because it reminds me of my all time favorite, XXX root beer. Was made in Texas in Galveston I believe. Went out of production but someone makes it on a regional basis now at least in syrup form. I run across it occasionally in fountain drinks. I miss it terribly.

Have you ever just been completly insulted preparing a meal?

I am the best cook of my family and of my wife's family. One thing I have learned is that my wife's family is perpetually 2 hours late. Thus a Christmas lunch scheduled for 1:00 at my sil's house becomes 3:00. When I prepare traditional southern Thanksgiving lunch it is ready when planned. I will prepare most of food early and just heat except for turkey. I have spent untold hours waiting for them to cook. One memorable Christmas dinner was to be at 3:00 (they sleep late and eat late). My wife and I got there at 2:45 to discover the meal had not been started. We ate at 5:00. Thank goodness for the beer and chips until then.

Disaster #1-mistakeing powdered sugar for flour and coated and saueted cod fillets with it, oh the humanity.

Disaster #2-feeling adventerous and making a sacher torte. Chocolate siezed up into a softball.

Beloved Texas-Based Chain Whataburger Makes a Fine Fast Food Burger

I have seen burger shrink on their patties. Still a great burger that I eat instead of MacDonald's, Burger King, Jack-in-Box etc. I have eaten onion rings at Sonic and Whataburger during the last two weeks. While the Sonic rings looked better, the Whataburger rings were tastier. Love the ketsup, the little buckets much easier to use than packets that explode all over you as you try to open them. French fries pretty good also.

What's the stupidest thing you ever ordered at a restaurant?

Broiled alligator tail at a Cajun restaurant in Alexandrie, La. Greasy and tasted horrible. The fried alligator tail was quite good. And by the way, yes frog's legs do taste like chicken, chicken that has been marinating in mud for a week.

Notes from the South: North Carolina Barbecue

This Texan had his first pulled pork at Alton Bridges' BBQ in Shelby, NC. Now I have no qualms about smoking a Boston Butt for 14 to 16 hours. Do not make Texas briscet anymore. I use a western NC rub and sauce. It is rumored that St. Peter hands out pulled pork sandwiches at the Pearly Gates.

Poll: What's Your Favorite Grocery Chain?

In a suburb of Dallas here. Central Market has most choice of above average food. Good selections of meat, seafood and cheese but you pay for it. Tom Thumb, Kroger and Albertson's also can be expensive but look for store brands. My favorite main store is Fiesta. Some have meat markets and seafood markets in them. Fiesta is heavy on the Hispanic market so don't expect to find items that you could pick up easily at Central Market. Food Lion tried a number of years ago to establish itself in the Dallas area until the green meat scandal hit.

I rarely eat candy bars anymore because of type 2 diabetes. I stopped soon after my doctor telling me that a snickers was the absolutely worst thing I could ever eat.

Cook the Book: Potato and Green Chile Stew

Pigs in a blanket made with vienna sausage and canned biscuits, spicy brown mustard and East Texas chow-chow (a condiment to those above the Mason-Dixon line) washed down with a Dr. Pepper. Sends me back to when I was 10 years old. Not pretentious like a lot of the postings were.
