Serious Salads: Kale, Apple and Pancetta Salad

I am eating a very similar combination for lunch right now. It was in the most recent Saveur. Beet greens for the kale, prosciutto for pancetta, add some roasted butternut squash, drizzled with buttermilk. Tasty (and relatively healthful) combinations in both salads.

Homemade Milanos

Bravetart: for those of us home cooks who have been baking for 40 years and seem to have worked through any issues with the imprecision of volume measurements, would you consider including those metrics, perhaps in parentheses with a "don't sue me" disclosure? thanks so much.

Homemade Crunchy Nutella

Must have missed something. Mine came out crunchy from the brittle in the candy not the nuts. Toooo sweet. I'll eat it so as not to toss $4 worth of nut oil and a bar of chocolate, but I am disappointed. Any guesses or insights?

French in a Flash: Easy Awesome Eggplant Tian

I made this in a single baking dish with the slices overlapping. As Kerry points out, just broil slices until they're cooked through. The marinara sauce I had on hand was labelled "spicy" and it added a nice kick. It is a most delicious way to prepare eggplant. I just ate the leftovers for lunch, which is why I had to comment. Wow. I wish I had another helping....

Dinner Tonight: Curried Lentil Soup with Chickpea Purée

I can't add much to what's already been said--this is a great soup, quick to prepare, delicious and filling. The additions/expansions just show what a good base it is. I did have fresh homemade hummus on hand and it worked like a charm.

Frankly, I don't see the point. For me, even putting ice in beer is an abomination. A squirt of lime juice, maybe. Some things are just better left alone.

Cakespy: Homemade Thin Mints

dmcavanaugh is right, buy from the girls while you can. The money raised supports troop and girl activities. Plus they learn important financial and entrepreneurial skills through the sales. Costs are up because the bakers charge more; the bulk of the sales goes to the girls. If you'd rather make your own cookies, write your local council a check. Thanks.

Staying on topic, I will try these and the Samoas because they sound and look terrific. If you need an excuse to buy more Thin Mints--crush a bunch with a rolling pin, roll a scoop of ice cream in the crumbs, plop into a muffin paper, and listen to the oohs and ahs from dinner guests.

Healthy & Delicious: Lemon Basil Pasta Salad

No mayo means no added fat, no added calories. (I like that in a salad...). I made the chicken avocado salad last night, it was tasty, surprising and lovely. Keep up the good work!
