What to do with leftover rice?

Here is a recipe I've had at least 25 years. Chicken or veggies could be substituted for the tuna.
21/2c. cooked rice
4 eggs
2Tbls.butter, melted
2Tbls. chopped parsley(or other herb)
11/2c.shredded cheese(any kind)
1 can(7 oz.) tuna, drained and flaked
11/4c. milk
1/2 tsp salt
1/4 tsp dry mustard
1/4tsp pepper
Combine rice 1 slightly beaten egg, butter and parsley. Press mixture against bottom and sides of 9 inch pie plate. Sprinkle 3/4c. cheese over rice. Top with half tuna; sprinkle with remaining cheese. Beat togethr milk,3 eggs, salt mustard and pepper. Pour over pie mixture and sprinkle with remaining tuna. Bake 375 for 25 to 30 minutes

Muddle together sugar and mint. Let sit for a little while, then add in plenty of fresh lemon juice. Mix in water to taste (seltzer water if you're feeling fancy), adjust sweetness/sourness, strain and serve, please!

Simple syrup squeezed with lots of fresh lime juice, fresh lemon juice (not concentrate or powder!) and filtered tap water. Shaken vigorously with a ridiculous amount of ice, and sometimes raspberry stoli.

I don't have a juicer, so from the store is usually the way I go. But if I do make it... it should be pretty tart, not too sweet. It's about the lemons, not the sugar.

Threadless T-Shirt Giveaway: Lemon Aid

Yea... I like to get that bottled lemonade that's all juice. Green top? Then I water it down a bit (all juices are too sweet for me right out of the bottle), and I might dash in some mint. All that blended with ice is nice too.

Fresh lemon juice, simple syrup, champagne, gin, shaken with ice, served in a martini glass with a brandied cherry. I believe this is called a French 75 at Michael Symon's Roast in Detroit.
